Directions for each:
1. Spinach and egg cup: Put 1/2 cup (75 g) spinach in a microwaveable mug. Pour 1 beat egg, seasoned with salt and pepper on top and microwave another 90 seconds (stir after 45 seconds).
2. Tortillas and beans: Heat up two corn tortillas, top with 1/3 cup (50 g) cooked black beans, and add tomato salsa.
3. Roasted garbanzo beans: Drain a 1 lb (454 g) can garbanzo beans. Toss with 2 tsp olive oil, salt and pepper. Roast on cookie sheet at 400 F (205 C) for 30 minutes or until crunchy. Let cool before consuming.
