Try the Butternut Squash Risotto of . Get creative with Hineleban Adlai. , low in glycemic index, lowers sugar and cholesterol, high in protein, and guaranteed delicious.
How to:
🥄 Peel and chop butternut squash into 1-1/2 to 2”chunks.
🥄 Roast at 375 F for an hour, turning halfway, until very tender and slightly browned. Pureé in a food processor and strain through a fine mesh sieve.
🥄 In a sauté pan, sweat onions, garlic, and marjoram in some olive oil.
🥄 Add in Hineleban adlai and continue to cook ‘til it starts to slightly toast and smell nutty.
🥄 Pour in white wine and cook out the alcohol.
🥄 In a saucepan, combine butternut squash purée, a bay leaf, and one to two ladles of boiling vegetable stock. Before adding extra stock, stir the adlai until the stock is almost completely absorbed. Repeat for another 20-30 minutes, or until the adlai is thoroughly cooked and the stock has been used up. Season as needed.
🥄 Brown some butter in a skillet and fry chili leaves (dahon ng sili) in the hot butter while the risotto cooks. Remove the leaves and set them aside.
🥄 Finish off the risotto with most of the browned butter, a generous grating of Parmigiano-Reggiano, and one last seasoning.
🥄 Plate the risotto and garnish with the fried chili leaves, roasted squash seeds, and light dribbles of browned butter.
