Juicy Cheesy Meat Lasagna

Who can resist a juicy, meaty, cheesy lasagna. Well we certainly can't. You shouldn't too.

Add in meat of our choice and vegetables, personally, we prefer mushrooms, tomatoes and lots of cheese. We'll cheese ain't a vegetable, is it. 😬😂😂😂🤣😜 anyways you get the point, throw everything in a pot, layer and voila, pop it into the oven for 20-25 minutes. I don't like to make tomato sauce separately, it feels like too much work so I chop lots of tomatoes, some tomato paste and garlic into the meat sauce and they get ready together.

So basically we layer in a pyrex dish
1. White sauce.
2. Pasta sheet pre-boiled.
3. Meaty sauce with vegetables and everything.
4. Pasta sheet/ lasagna sheets.
5. White sauce.
6. Lasagna sheet.
7. Meat sauce.
8. White sauce.
9. Lots of grated mozzarella and cheddar cheese.

~~~Coffee Crunch Cake~~~

Recipe link in bio. Made coffee crunch cake for my father's birthday long time ago and it was an instant hit. Super moist with a tender yet sturdy crumb makes it an excellent choice for sculpting or applying fondant on top.

In case you didn't notice, we own a home-based cakery too, where we sculpt and crumb coat all sorts of cake. Don't forget to follow my cakery page.

Anyways, back to recipe, so If you're not a fan of coffee ( already feeling sorry for you 😂😜 )omit coffee all together and make it into a caramel crunch cake. Drizzle caramel sauce on top and inside each layer and viola caramel crunch cake, how cool is that. 💕💯🎂🥳🥳🥳☺️😃

Cake in picture is the altered caramel cake, with crunch in every bite and caramel sauce drizzled on top.

~~~~~Crispy Fish & Chips~~~~~

This is a halal take on the classic fish & chips recipe that is served on a newspaper 😉 hint hint* 😁☺️

The super crispy flakes are no magic, but all science. It's two things, chemical reaction between the leavening agents and vinegar, plus the cold soda, or in our case chilled 7 up, I had diet 7 up on my hands so you can use which so ever you like. 😄 It's basically an adapted tempora batter, if you know what that means.

You just need to keep a few points in mind if you want your fish fillets to be super crispy, emm emm!!!

1. Soda should be chilled.
2. Check your leavening agents. Expiry of your baking soda and baking powder.
3. If it's too hot, keep batter chilled in fridge after every coat. ( Yes, it comes with a price.)
4. The crispiness fades away with time (alas!) so fry them just before serving, in the mean time keep the marinated fish fillets and the batter in the fridge.

We served it with homemade tar-tar sauce, that's basically:

3 tbsp Mayonnaise.
2 tspl gerkins chopped (homemade)
1 tsp Vinegar
Pinch salt
Pinch white peppers.
Stir everything together and enjoy!!!

Note: Fish fillets I used had no foul smell, (thankfully) but if yours do, add some garlic (powder or freshly crushed) and Lemon juice to marination.

A few days to Ramadan 2021 🤩🤩🤩🤩💯🥳🥳🥳🥳🥳❤️😃 Alhumdolillah!!! And we are super excited. May Allah allow us to reach Ramadan in best of health- both mental and physical, and with eeman and aafiat ameen sumameen!

Not just us but our freezer is all prepped up and ready for Ramadan too. So many goodies, all hard cold and unreachable for now await. The lid of those containers can only be opened once it's Ramadan.😂😂😂😁😅⚡ It's like it's there but we don't consider it there. Our freezer is tiny (by choice) so we made small batches of everything. 😁

But how's your preparation going? What's in your freezer?

Have you tried our Black Magic Cake? It's rich and chocolaty, perfect to satisfy your sweethtooth, in SHA Allah 😃😬🥳🥳🎉😊♥️💕🎈❣️🤭😃

It has a rich, dense yet moist crumb with a deep chocolate flavor. I've baked this cake many times and it's the very best chocolate cake I’ve ever baked. You can use dark cocoa powder for a richer taste. I used Cadbury cocoa powder. It's a one bowl, chocolate cake recipe that takes up all of its flavor from the cocoa powder so get the best one you can find. Don't be stingy, for best results, invest in good quality products. As the proverb goes, "Good is the enemy of great" so don't be OKAY with average. But this cake is crazy good. You can even pop the batter into cupcake cases, bake them in pre-heated oven at 180°C, for 13-14 minutes and enjoy cupcakes.

It doesn’t need icing. But you can enjoy it with fresh berries and whipped cream instead of the regular Chocolate or like we used white chocolate ganache frosting.

We even use the same recipe in our cakes business and it's a hit alhumdolillah. 💓 But don't take our word for it, try it yourself and find out. 😃🤭🥳🥳

With Ramadan just around the corner, have you started the prep work?

Remember it's not just the iftar menu you should be concerned about, it's also about your spiritual growth - your eeman, how you can make your kids your sadkae jaaria, how to distribute food in your neighborhood, a something to make you stronger both physically and spiritually should be the target, no?

Plan your days ahead, if you have younger kids, plan their activities accordingly as per your schedule to make most out of . Encourage them to pray, read Quran, learn a little more about our Prophets, their mission , how they spent their days and nights.

So let us pray that this Ramadan finds us in best of our health- both mental and physical. May Allah grant us eeman, increase our taqwa, and help us make most out of this Ramadan. Ameeeeeeeen!

Nothing should stop us 'desi foodies' for trying out this viral wrap idea. But we gotta make do with whatever we got. So we only got aalo goubi, shami kabab and some tandoori roti, because there's hardly any gas to cook roti at home, non the less tandoori roti rocks ⛽ 👏👏✔️😂🥳♥️☺️😍 alhumdolillah!

Wrap was a success, two of three kids loved it. 🥳🥳🥳🥳♥️☺️👏👍

Banana Chocolate Chip Muffins

Had some over ripe bananas with me and had nothing to do with them. So, I took Nigella Lawson’s book out and found this wonderfully aromatic recipe. Fun way of adding bananas to picky eaters. 😻🤣☺️🤗

As soon as these ugly babies start baking in the oven, the whole house gets filled with this warm caramelized bananas and brown sugar aroma, so lovin’ it!

Muffins are not same as cupcakes hope you know that. The amount of butter and sugar is higher in cupcakes than in muffins. The mixing process and the consistency of the batter differentiates cupcakes and muffins. Cupcakes are made by creaming the butter and sugar together to create a smooth, fluffy batter. Muffins on the other hand are both savory and sweet and their texture is a bit on the tough side than the cupcake.

~~~Lahori Fried Fish~~~

No winters are complete without having a good desi fish/machli. There are only a handful of names that come to the mind that actually sell good quality, flavorsome fried fish in Lahore.

But changed everything and that includes eating-out aswell. We don't go out as often as we used to go. Because we don't want to regret it later on. And that's the bitter truth.

But that doesn't mean we can't have the best of these winters. This recipe is a family favorite. It's simple and pretty straightforward. But the results are amazing. One of the finest fish recipes you can find.

We've tried it on both bony Rahu fish chunks as well as on boneless fish fingers. Both taste great. I prefer boneless finger pieces for kids because of the ease, duh! But of course you are free to try it on your favorite cod.

As per there are 531 types of Fish in Pakistan. And out of them 233 are fresh water fish.🎏🎣🐟🐠🐡🦈 How cool!

2 Minutes Ice-cream Sandwich

Yup these are easy to make, just 2 minutes required ice-cream sandwich.

All you need is lava biscuits, done vanilla flavored and some sprinkles.

There are a bunch of cookie types that you can use but the main reason I used lava cookies is because of their size, yes! 😊 They have a decent size to satiate my sweet tooth. You can cookie of your choice and then adjust the ice cream scoop accordingly.

Once you take a cookie, scoop in some ice cream, place another cookie on top to make a sandwich, gently press. Now role the sandwich in sprinkles. Instead of sprinkles you can add chocolate chips, chunks or topping of your liking.

Now pop these into an air tight container for at least 20 minutes and then enjoy!
