Simple soup recipe :) ingredients have been hard to come by so this came about by using what I had to hand. The past couple of weeks have been a little hard on the digestive system (the brain gut connection hard at play here) and wanted something that was easy on the tummy and didn't take too much effort either!

You can switch out the ingredients for whatever you have on hand and bulk it up with rice, pulses, pasta or protein of your choice!

I used:
10 baby new potatoes halved (skin on)
4 carrots peeled and sliced
1 sweetheart cabbage chopped
1 very large onion
1 tablespoon of chillies
3 cloves of garlic chopped
1 1/2 litres of filtered water
1 kallo vegetable stock cube (optional)
Italian dried herbs (use whatever herbs you love and have available to you)
Salt and pepper

To make:
1. Place a large pan on a medium heat with a dash of water and cook onions until soft
2. Add the potatoes, carrots, cabbage, stock, water, herbs, chillies and salt + pepper
3. Bring the heat up to a boil and then simmer on a low heat for 45 minutes (I simmered this for about an hour and did other activities and just checked up on it here and there) you can eat this as soon as the potatoes are cooked but like to simmer for a bit longer to bring out the flavour of the cabbage and onion
4. You can add the garlic anytime in making this soup. If you add it in the last 5 minutes of cooking you can retain more of its nutritious components or I added some halfway through cooking to add to the flavour and then added the rest at the end.
5. Serve and enjoy :)

This made about 4 portions but you can add more or less depending on how many people you are cooking for.

Whilst this recipe isn't anything exciting, I thought I would share it anyways. We are normally so spoilt by choice that we often overlook the simplest things. What dishes have you been making recently?
