What I love about raw desserts is using ingredients in their purest form therefore serving in little amounts and leaving plenty of space on the plate for the decoration🤹‍♀️

Penne with fennel paprika cream 🧡

Ingredients
500 g pasta
400 g silken tofu
250 g roasted paprika
150 g roasted tomatoes
100 g roasted fennel
1 cup pasta water
5 garlic cloves
2 tbsp maple syrup
2 tbsp olive oil
5 tbsp tomato paste
3 tbsp nutritional yeast
2 tsp pink Himalayan salt

Toppings
50g thinly sliced fennel
1 red onion thinly sliced
1 tbsp maple syrup
1/4 tsp pink Himalayan salt
1 tbsp olive oil
Hempmesan to serve (or vegan parmesan)
Fennel fronds to decorate (fennel fronds can be used like an herb to impart fennel’s licorice notes in raw and cooked dishes)
Red oxalis to decorate

Instructions
1. Cook your pasta according to package instructions. Reserve 1 cup pasta water for the sauce.
2. Add all ingredients except pasta, blend until everything creamy and smooth.
3. Transfer sauce into a pot, warm it up until bubbled stirring occasionally. Taste and adjust the seasonings.
4. Add your pasta, toss with the sauce.
5. In a pan, add the toppings, fry at medium heat until crispy. Top on your pasta, sprinkle some hempmesan. Decorate with fennel fronds and oxalis. Enjoy!

Twisted Danish Potatoes 🇩🇰

Spiral potato skewers , tornado – or twisted potatoes as they are also called – are good for everything from casserole dishes, salad and soups to burgers and falafel. Especially with a good dip, such a serving can complete a meal or be served as a wonderful snack.

In this recipe, I season the twisted potatoes with dill and flake salt. But you can season with just what you feel like. It may depend a bit on what you want to serve for. If it’s for a burger, the classic french fries or just a little paprika is obvious. If you serve with tofu, thyme and / or rosemary is the way to go.

Ingredients
500 g Yukon gold potatoes
40 g olive oil
2 teaspoons fresh dill
1 teaspoon flake salt

Instructions
1. Turn the oven to 200 degrees.

2. Wash and dry your potatoes, using a mandoline slice them thinly, then put on the top of each other. Using a sharp chef knife, cut the edges and shape it into a square. Repeat the process for the rest of potatoes.

3. Insert a skewer through the center of the potato cubes.

4. Carefully pull the potato spirals apart so that there is a distance between the slices.

5. Brush with olive oil and season with dill or your favorite spice and flake salt.

6. Place the potato spirals in an ovenproof dish and place them so that the skewers rest on the edges of the dish.

7. Bake the potatoes for 30 minutes, until golden and tender.
8. Serve with a homemade vegan tartar sauce or mayo if you want.

Easter is just around the corner ✨

Morotskaka 🍰 🥕 which means carrot cake - A Swedish easter cake based on carrots and very spicy nuts, as it involves the addition of ginger and cinnamon, traditionally covered, and sometimes even stuffed, with a glaze prepared with fresh spreadable cheese and lemon flavored sugar.

In our raw version, we use raw shredded carrot, flax and nuts as a base and on the top sunflower seed cheesecream flavoured with orange and maple, decorated with handmade raw marzipan carrots.

Sklandrausis — Latvian carrot potato pie 🇱🇻 It was voted the worst food in Europe by a website. Not only Sklandrausis, the entire Latvian traditional cuisine has been recognized as one of the most untasty in Europe, leaving only Malta and Iceland behind.

When we accept the fact that things like the best or the worst vary depending on one’s experience, expectations and taste, we should not put these definitions on to any country or person. In addition, no matter how bad it is, kindness is a virtue that elevates people.

This beautiful traditional dish deserves good attention and re-branding. 🫶🏻

🌈Tip for making the perfect spaghetti squash: Cut them into rings! When you cut the squash into rings, as opposed to just slicing it down the middle, you work with the strands, not against them, since the spaghetti squash strands run horizontally, in a circle, inside of the squash. When you follow this method you will never get soggy squash anymore, just make sure you don’t cook longer than needed.
