Gazpacho 🍅

I'm always captivated by the stories behind the dishes we love. Gazpacho isn’t just a summer soup—it’s a flavorful journey through history! This humble staple first originated in the Andalusian region of Spain in the 8th century, and dates back to Roman times where this soup was only made with bread pieces, olive oil, vinegar and garlic. The soup evolved into different varieties since then, it wasn’t until 16th century the first tomato gazpacho was made which is also the popular version outside of Spain today enjoyed mostly in hot weather. So fascinating!

It’s undoubtedly one of the quintessential chilled soups to have in summer. Don’t underestimate the refreshing flavours of a cold soup, it will surprise you in many ways!

Reducing food waste saves money and helps our planet! Did you know nearly one-third of the world’s food is wasted each year, along with all the resources it took to produce it?

Here are some impactful tips to reduce food waste:

🍽️ Plan Your Meals: Create a weekly meal plan and shopping list. Check what you have at home first to avoid buying unnecessary items.

🔄 FIFO: Use the “First In, First Out” rule. Ensure older items are used first to prevent spoilage and save money.

♻️ Upcycle Leftovers: Get creative with leftovers! Turn last night’s dinner into a new meal or make a veggie broth from scraps.

📦 Proper Storage: Store food at the right temperature in airtight containers. Freeze excess produce or leftovers to extend their shelf life.

🌿 Buy Seasonal & Local: Choose seasonal and local produce for optimal freshness and flavor, reducing the likelihood of spoilage.

Rainbow Chard Protein-Packed Salad Alert! 🌈🥗
A nourishing wholesome dish to brighten up your week. This Rainbow Chard salad, loaded with roasted chickpeas, toasted pumpkin seeds, cashew, and feta, is a perfect weekday lunch or dinner dish. It tastes as good as it looks!

INGREDIENTS 🌈🌱
* 3 bunches rainbow chard, rinsed and trimmed (from )
* 1 medium onion, diced
* 4 tbsp olive oil
* 1/2 can chickpeas, lightly toasted
* Feta cubes (we used )
* 80g toasted cashews (about a fistful)
* 1/4 cup raisins
* 80g toasted pumpkin seeds
* 1 tbsp lemon juice
* Salt & pepper to taste
* Mixed herbs for extra flavor (optional)

Directions:
1. Prep the Chard: Soak non-organic chard in vinegar water for 5 mins. Rinse well. Separate the stems from the leaves. Chop the leaves and dice the stems. Set aside. Dice the onion.
2. Cook the Base: Heat olive oil in a skillet over medium heat. Sauté onions until transparent. Add chard stems and cook for 3-4 minutes until they start to soften.
3. Add the Leaves: Stir in the chard leaves, cover, and cook on medium-low for 5 minutes or until tender. Toss in mixed herbs (if using), lemon juice, salt, and pepper. Mix well and set aside to cool.
4. Finish Up: Toss in toasted chickpeas, cashews, raisins, and pumpkin seeds. Top with feta cubes and give it a gentle mix.
