Plenty of spinach (70%), a handful or two of frozen blueberries, half of a frozen 🍌, one beetroot, 100ml of oat milk, 1tsp of moringa powder, handful of chia seeds and top up with water.

This is what you make when you are lazy and it's the last day to save the veggies from dying.

Super easy, add olive oil, heat 1/2 onion and 1 small garlic, then add all the veggies and stir, cook for 5-10min, add spices and water and continue cooking for another 10min and done.

Ingredients (approx 4 servings): olive oil, onion, garlic, 1/2 broccoli, a package of sliced mushrooms, 1 potato, 10 baby carrots, 1 can of chickpeas, 2 chillis, a can of diced tomatoes (just tomatoes, water and salt, no sugar), spices (salt, pepper, chilli flakes, smoked paprika, cumin).

While we are waiting for today's food to get cooked, I'll share yesterday's and ideas.

Pic 1πŸ˜‹ Mock meat (soy-based, Janet said it tasted just like chicken, I bought it from cold storage), with some capsicums, edamame beans, quinoa leftovers (we are now done with quinoa for the week) and mixed greens and spinach.
Pic 2 πŸ˜‹ a salad with whatever I could find in the fridge. I had a glass of kefir on the side.

While we are waiting for today's food to get cooked, I'll share yesterday's and ideas.

a of frozen bananas, blueberries, strawberries, 4 tbsp of chia seeds and passion fruit on top

#2 was banana with peanut butter
for lunch, and a fruit bowl (1cup of papaya and 1 dragon fruit)

That would be my food diary for today. :)

It's time! Let me introduce you to aka Lovegrass πŸ₯° It's a grain that took me a lifetime to discover. It was introduced to me last year by my grain connoisseur boyfriend, and I've been loving it since! Super nutritious and rich in iron! πŸ‘‰ For the nutritional info. 🌱 It's simple to prepare and so rich in flavor that I even use it in cakes, as a base (instead or flour or semolina).

So, it's teff and water, a little bit of oat milk at the end, and then just top it up with fruits, nuts, dates. ⏱️ 10-15min prep. πŸ˜‹

πŸ˜‹ for breakfast (mix chia and coconut milk, leave it in the fridge overnight, and then top it up with some granola, banana, and berries)

πŸ˜‹ for lunch (multigrain tortilla, onions, mushrooms, black beans, lentils, tomato slices, tomato sauce, a few dots of habanero and jalapeno sauces, oregano, salt, pepper, decorated with spinach leaves and cherry tomatoes on the side).

Yummy!

choice is based on leftovers in the fridge! πŸ˜‹ Roasted veggies (pumpkin, sweet potato, cauliflower, baby carrots - spiced with cumin powder, salt, pepper, smoked paprika and oregano), spinach, black beans, cherry tomatoes and red cabbage sourkraut. Microwave and 30min of grilling, That's it!

Apart from that, I've been mostly on fruits (dragonfruit). My favorite go-to snack is frozen berries with yoghurt, but I had some watermelon with feta (pic 2) and a (2 handfuls of spinach, 1 handful of frozen berries, 2 tbs of chia seeds, 1 beetroot and some coconut milk)

Today I have successfully resisted a cupcake offer, and I am quite proud of it :D This was my alternative:

a slice of a toasted multigrain 🍞, half of a dragon fruit, half a handful of πŸ‡ and a glass of kefir.

spicy Taiwanese noodles and a herbal soup from (pics 2&3)

πŸ₯— a salad (mixed greens, red and orange cherry tomatoes, french beans, Japanese cucumber, beetroot, black beans, feta cheese, pumpkin seeds). You may add a dressing if you like - olive oil and lemon juice are a good, healthy option. ☺️

Today's snacks were: green apple, lemon-infused water and a coffee with oat milk.
