Welcome to another recipe Sunday !!! We have another interesting recipe just for you! Instead of using good ol' oats for a sweet breakfast, we can create some delicious and savoury oatmeal!!!

Ingredients: (Serves 4 people)
400g of rolled oats
1 liter of stock (use any kind you like! Homemade or Store-bought works)
4 eggs
2 tbsp soya sauce
Sliced Green onion
Chili Oil/ Sesame Oil (to taste)
Fried Shallots/Onions (to taste)

Steps:

1. Combine the rolled oats and stock in a pot. Simmer for 10 minutes over low heat or until it reaches your preferred texture. Transfer to 4 serving bowls.

2. Poach the eggs in a large pot of water. (If you're feeling healthy)
Alternatively, you can pan fry them or use soft-boiled eggs. (If you're feeling sinful)

3. Top the eggs on each bowl of oatmeal. Drizzle with soy sauce and sprinkle with green onion. For an extra boost of taste and texture, add chili oil and sesame oil and sprinkle with fried shallots (or fried onion). (feel free to omit chili oil if you can't handle the heat.)

Anyways, welcome to another recipe Sunday! Today we have another delicious snack for everyone: Curried Cashews

Ingredients:
280g of raw cashews
1 tbsp. extra-virgin olive oil
1 tbsp. curry powder
2 tsp. sugar
1 tsp. ground turmeric
1 tsp. sweet paprika
3 tbsp. fresh lime juice, plus 1 lime finely zested
salt and pepper (to taste)

Steps:

Step 1:
Preheat oven to 150°C. Line a rimmed baking sheet with parchment paper. Pour cashews onto the sheet. Toss with oil and salt and spread evenly. Bake, tossing halfway, until cashews are lightly golden, for about 15 minutes.

Step 2:
Meanwhile, in a bowl, whisk curry powder, sugar, turmeric, paprika, and black pepper with lime juice until smooth.

Step 3:
Remove the tray from the oven and carefully pour the spice mixture over the cashews, tossing well to coat.

Step 4:
While warm, scrape cashews onto a plate in an even layer and sprinkle with salt and lime zest. Let cool for at least 15 minutes. Serve warm or at room temperature as it cools.

Welcome back to another recipe Sunday!!!! I know, love is in the air!!!!!!!! So let us give you a dazzling recipe for your beloved partner instead of the classic breakfast in bed!! (If you don't have a partner, make this for yourself and make it single's appreciation day instead)

Butterfly Pea Flowers (Dry or Fresh)
1 litre of drinking water
1 tbsp Honey
2 tbsp Brown Sugar
50ml Lemon/ Lime Juice
1 Can Sprite/ F & N Ice Cream Soda

Steps:
1. Boil the water in a teapot. For fresh flowers, cut the green bottoms off. If using dried flowers you can skip this step.

2. When the water has boiled, kill the heat and put the flowers in. Allow this mixture to sit for 5 minutes without further heating (do not overboil as a bitter taste will develop).

3. After 5 minutes, strain the tea concentrate into a jug. Whilst still warm add the honey and brown sugar and stir to dissolve (you can adjust sweetness by adding more or less to your taste). (other sweeteners like golden syrup and maple syrup are worth trying)

For Serving:

4. Add some lime/ lemon juice and the blue color will turn purple.
Top up with, sprite or 7-up or just plain water.

Welcome back!!! Well thankfully I have an obsession with chickpeas and Mediterranean food so I promise I'll make a new recipe that is not chickpea related you have my word!!
But instead of a creamy spread like Hummus let us make a potato chip substitute with my Chickpeas!!! ~The lovely Emtech Intern

Ingredients:
400 grams Chickpeas (any amount could work so feel free to tweak it accordingly!!)
1 tbsp. extra-virgin olive oil
2 tsp. chili powder
1/4 tsp. kosher salt
Finely grated lime zest, for serving
(This recipe is ultra versatile so feel free to add in different seasonings and spices to jazz up your snack. I guarantee you won't regret it!!)

Steps:

Step 1
Dry chickpeas very well with paper towels or a dry clean towel. In a medium bowl, toss chickpeas, oil, chili powder, and salt. (Add in your seasonings at this step!!)

Step 2
Transfer chickpea mixture to an air-fryer basket, scraping bowl to get all of the oil. Cook at 370° until crispy and golden brown, 10 to 14 minutes.

Step 3
Serve chickpeas warm or at room temperature. Grate lime zest over to add that refreshing contrast to your seasonings!!

Looking for that spice in your life? We got you covered! Today we have Chhole otherwise known as Chickpea Curry that will turn up the heat!

Ingredients:

1 serrano pepper, cut into thirds

4 cloves garlic

2 tsp of fresh ginger coarsely chopped

1 medium yellow onion, finely chopped

2 tsp ground coriander

2 tsp ground cumin

½ tsp ground turmeric

480g diced tomatoes (fresh or canned both works!!!!)

¾ teaspoon kosher salt

300g of chickpeas

2 tsp garam masala

100ml of coconut milk

Cilantro for garnish (optional but recommended)

Step 1
Pulse serrano, garlic, and ginger in a food processor until minced. Scrape down the sides and pulse again. Add onion and pulse until finely chopped.

Step 2
Heat oil in a large saucepan over medium-high heat. Add the onion mixture and cook, stirring occasionally, until softened, 3 to 5 minutes. Add coriander, cumin, and turmeric and cook, stirring, for 2 minutes.

Step 3
Add tomatoes into the same pan, add salt and sweat it down to a liquid. Reduce heat to allow it to simmer and cook, stirring occasionally. Add coconut milk, chickpeas, and garam masala, reduce heat to a gentle simmer. Serve topped with cilantro, if desired.

With all of our posts encouraging more healthy facts, you don't need to deprive yourself fully. It’s CNY, and everyone's entitled to indulgence a little when it comes to the festive season. You can indulge a little here and there and still maintain a healthy diet. For example, you can limit yourself on how many pineapple tarts you intend on eating per day.
