Swipe for my favorite beet salad [or side dish] & perfect for summer ☀️🥗 details 👇🏻

Salad:
- cucumber
- tomato
- onion
- beet
- feta (I chose low fat feta)
- cheese (pick your fav flavor, cubed)

Dressing:
- 1/3 cup olive oil
- 1TSP salt
- 1TSP pepper
- 2TBS dijon mustard
- 2TBS balsamic vinegar
- 2TBS honey

Drizzle some on top & add more if needed!

Been MIA for all of right reasons. Life gets busy. Recently I have been wondering, “how did I get so busy to stop doing something I enjoy?” This account has allowed to meet new people, help and inspire, and put myself out there allowing myself to grow into the person I am meant to be. The past year and couple months has been exciting to say the least… adding another niece and another nephew into my life, my sister and I getting engaged & buying houses 5 mins from each other, Zack and I chasing our dreams together, planning a wedding, traveling out of the country for the first time with my best friend, promotions and living down the shore for a couple of months… oh and teaching Zack how to clean toilets 😅 but it’s always been a time full of regret, change, fear and emotion.

This account allowed me to gain confidence in myself and showed me that fitness & health is my passion and I want to always be able to share that with others. I’m making a promise to myself that no matter how busy life gets, through all of the good & the bad… to always come back to what I love most.

Oyster Rockefeller 🦪

Now that Zack and I made it a couple of times, I can honestly say we have mastered it (total bias opinion here)

Ingredients for the sauce (for 18 oysters)
- entire bag of spinach
- 1/2 cup of almond milk (unsweetened)
- 1/3 cup heavy cream
- 1/4 of a cup parmesan cheese
- little bit of salt
- little bit of pepper
- 4 garlic cloves cut up
- sprinkle of onion powder
- bread crumbs (sprinkle on top of oyster after you stuff it with the sauce)

I sautéed the garlic cloves first and then put in the spinach. After they both were cooked I added the rest of the ingredients. You can always add less ingredients or add more after you taste it. Bake at 400 degrees for 8 minutes!

Perfect appetizer & family favorite 😋

Grilled eggplant sandwich with onions, peppers + garlic & herb goat cheese 😋

Directions on cooking eggplant:

First, slice the eggplant about 1/2 thick. Then you will want to season the eggplant with salt, pepper and a little bit of garlic powder. You can either fry or roast the eggplant in the oven (to fry just put a little bit of oil on the pan & put the sliced eggplant on the pan) but if you want to roast the eggplant line a cooking sheet with tin foil and some oil & place the sliced eggplant on top and cook for 30 minutes on 400 degrees.

You can either use a bun (this is a whole wheat bun) or toast up some ciabatta bread 🔥

The garlic & herb goat cheese adds a delicious flavor which makes it a staple for sure in this meal!

But are you ever this happy eating??

[ Cod ] Taco Tuesday:
- wrap (with protein)
- cod seasoned with garlic, onion, salt & pepper
- fresh salsa
- shredded cheese
- sautéed peppers & onions
- rice

This dinner was superrrrr easy & light. Perfect for a summer dish 🐟 🌮
