I had a client in my office today, and we were talking about ways to get more protein and vegetables into her daily nutrition, as well as the fact that it is SOUP SEASON! Yup- it has arrived early, but soup is really a great way to get veggies into your body!
Try this Taco Soup!
2 lbs lean hamburger, turkey burger, ground chicken, or venison
1 packet of taco seasoning ( I use Pampered Chef Southwest seasoning with chili lime rub)
1 can of corn
1 can of black beans
1 onion
2 cloves fresh garlic
2 cans of rotel tomatoes
2 cans of beef broth
1./2 brick of 1/3 less fat cream cheese
1 bag of fritos
1 brick of co-jack cheese-shredded
ROCKCROCK INSTRUCTIONS for the Microwave: It is SO FREAKING GOOD!
1. On cutting board, cut the ends off of the onion. Once peeled, place wedges into the Manual Food Processor. Process until finely chopped. Dump into Dutch Oven Rock Crock.
2. In RockCrock, place burger in. Press in two cloves of garlic using the Garlic Press. You can leave the skin right on the garlic when using the press!
3. Empty taco seasoning packet onto burger as well. Place burger and onion mixture into microwave for 5 minutes. Remove using Red Silicon Oven Mitts. Set on stove top or hot pad and break burger into fine pieces using our number one selling Mix-n-chop! Place burger back into the microwave for 4-6 more minutes, until cooked through. When cooked, remove burger from Dutch Oven using the Mini scoop n-drain. Place burger into small Stainless Steel Mixing Bowl. Pour grease into separate bowl to dispose of.
4. Open cream cheese and SET ASIDE. DO NOT include this in your other mixture. You will want to melt this into the RockCrock as soon as its out of microwave.
5. Using Smooth Edge Can Opener, open the cans of tomatoes. If you need a demonstration, please ask Jess! The can opener is one of our top sellers, and goes around the TOP of a can. Open Can of Corn and dump into Stainless Bowl. Open both cans of Tomatoes, dump into bowl, again NOT drained.
6. Open Can of Black Beans, and take over to the sink. Pour the can of beans into the Easy read measuring colander and rinse with water. Pour into bowl.
7. Open and empty the 2 cans of beef broth into the bowl as well.
8. When Dutch Oven Rock Crock is emptied, melt the cream cheese into the DORC in the microwave for 45 seconds. Then, Pour all contents of the Large Stainless Mixing bowl in. The Dutch Oven may be hot, so use the mitts. Using Mix N Scraper, stir all ingredients, try to somewhat whisk the Cream cheese and mix it in. Microwave for 7 minutes.
9. Add in drained burger. Mix well and top individual bowls with whatever toppings you enjoy!
Electric Pressure Cooker Instructions: (instapot) or Pampered Chef Quick Cooker: QUICK COOKER (pressure cooker) DIRECTIONS:
1) get ingredients all out. Turn QC to sear. Add burger and garlic. Cook about 6 minutes, chopping with mix n chop.
2) cancel sear. Add in everything except cheese and heavy cream. Cook on custom for minutes. While it’s cooking, grate your cheese.
3) once done, do a quick release. Add in heavy cream or 1/2 brick cream cheese and stir. Serve in bowls and top each bowl with grated cheese! (And Fritos or tortilla chips if you’d like)!
