Sweet Potato, Spinach, Broccoli & Chickpea “Curry” Casserole

Ingredients:
• 2 medium sweet potatoes, peeled and cubed
• 1 can chickpeas, drained and rinsed
• 2 cups fresh spinach
• 2 cups broccoli florets
• 1 can full-fat coconut milk
• 1 tsp turmeric
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tsp salt
• 1/2 tsp pepper

Instructions:
1. Preheat oven to 375°F (190°C).
2. In a microwave-safe bowl add sweet potatoes and almost cover with water. Microwave for 3 minutes.
3. In large pot, add broccoli, sweet potatoes, chickpeas, coconut milk, turmeric, cumin, coriander, salt, and pepper. Simmer 5–7 minutes until slightly thickened.
4. Stir in spinach until wilted.
5. Transfer mixture to a baking dish and bake 20 minutes until bubbly. (I started with it covered then uncovered for the last 10 minutes)

Love this recipe. It’s quick and great to eat in over the week!

We all have the potential to be superhuman. 🦾
The mind is more powerful than most of us even realize—it’s an untapped force. When we truly believe something (positive or negative), it becomes our reality.

Patience and consistency are two of the most underused tools in any transformation—whether that’s mindset, business, or your body.

Health, good or bad, is simply the result of repetitive habits. And just because you don’t see an immediate change doesn’t mean what you’re doing isn’t working.

Eat a donut—you won’t have heart disease today.
Eat an apple—you won’t cure it today.
Go for one walk—you won’t get strong overnight.
Skip one workout—you won’t lose all your progress.

But stack those habits day after day… and eventually, you will see a result.

This is especially for my beginners: let this sink in. Nothing happens overnight—but everything happens over time.

So the real question is—which result do you want?

This is where the power of your mind shows up.
If you believe you can change, you will.
If you believe you can’t—you won’t.
