Sweet Potato, Spinach, Broccoli & Chickpea “Curry” Casserole
Ingredients:
• 2 medium sweet potatoes, peeled and cubed
• 1 can chickpeas, drained and rinsed
• 2 cups fresh spinach
• 2 cups broccoli florets
• 1 can full-fat coconut milk
• 1 tsp turmeric
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tsp salt
• 1/2 tsp pepper
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a microwave-safe bowl add sweet potatoes and almost cover with water. Microwave for 3 minutes.
3. In large pot, add broccoli, sweet potatoes, chickpeas, coconut milk, turmeric, cumin, coriander, salt, and pepper. Simmer 5–7 minutes until slightly thickened.
4. Stir in spinach until wilted.
5. Transfer mixture to a baking dish and bake 20 minutes until bubbly. (I started with it covered then uncovered for the last 10 minutes)
