Some of the things I’ve loved cooking & eating over the last few months. As a working mom my time seems to be more preciohs these days but as a dietitian, I also know how important it is to prepare balanced meals for myself and my family. Don’t let these things fool you because this is just a handful of meals over a few months and there are many times with my husband takes charge of dinner. Thankfully some of my habits have rubbed off on him over the last 11+ years of marriage. ☺️
Beer Cheese Soup & roasted Brussels. (Went a little crazy with Brussels sprouts lately). Mini charcuterie dinner trying to clean out the fridge: chickpeas, bell peppers, mozzarella cheese stick, carrots, Italian dressing & crackers. (Not pictured: the Hershey’s chocolate I had later )Roasted tomatoes, carrot, onion & garlic blended with Boursin cheese for a fantastic home made tomato soup. All the broccoli & lemon ricotta pasta, & super tasty pumpkin muffins. I always prioritize getting trying to get a non starchy veggie with meals but sometimes we don’t get to do that and it’s ok! And I always try to leave some leftovers for a quick lunch or for one of those afternoons when I have zero time and energy to cook.

Most people quit their New Year’s resolutions by the end of January. Those “cheat days” can add up really fast and slowly chip against your health goals. Our relationship with food shouldn’t be a controlling and abusive one. Food shouldn’t control us nor should we use food to numb ourselves or eat our feelings. Willpower can only go so far when you are trapped to an unsustainable method.

It’s been a while since I’ve shared on here. We’ve just been busy! I’ve been back at work for about 2.5 months and it’s an entirely different ballgame with 2 kiddos who’ve been sick. Sometimes we just need something easy and cheap for dinner because inflation is real and 2023 has been exhausting. Mama is tired and tonight we had ramen noodles for dinner with a twist! We may not think of ramen noodles as a dietitians top pick (and I don’t recommend them for patients with certain diseases) but moderation and balance are SO vital. So, how did I try and make this more balanced? I scrambled the cooked noodles with an egg and some egg whites for protein and fat, and didn’t use the whole seasoning packet to avoid excess sodium. I cooked some edemame on the side for added protein and fiber! And 3 year old Liam preferred the edemame over the ramen. I credit baby-led feeding for him being more open to various foods and textures. I wanted to share this meal because it’s just a reality for working, every-day families and I really want to break this stigma/pressure that all meals have to be perfect. Sometimes eating healthier means learning to create better balanced meals and I’m really passionate about sharing budget friendly, practical modifications to help you eat healthier!

As a dietitian who also enjoys frugality, I love the intersection of nutrient dense and budget friendly. PB&J isn’t just for school aged kids! It’s a really cheap and easy lunch to pack/make ahead & it helps satisfy a little sweet tooth!
Pro Tip: Add ground flaxseed to your PB&J for an extra boost of protein, fiber, omega 3s! You won’t even notice it’s there!
Flaxseed is helpful for helping to improve digestive health, lowering cholesterol & reducing inflammation. I usually pair my PB& J with carrots and hummus on the side , one of my favorite snap pea crisps or pretzels, and maybe some sharp cheddar cheese for a little additional protein.

It’s not recommended to consume more than 2-3 tablespoons of flaxseed a day or you may have more tummy troubles than you bargained for.
