Weekly Focus Reminder: Staying Strong Through the Holidays!

As we head into the holiday season, let’s stay mindful and focused on our goals! It’s fine to enjoy an event here and there, but remember: sugar is one of the most addictive substances in our country. Once it sneaks back in, your body will start craving more. The best thing about following this plan is that it resets your baseline insulin levels, which can curb cravings, support healthier food choices, and help you age well.

As the weather cools, don’t forget to enjoy delicious, plan-friendly meals! Lean roast, taco soup, chicken tortilla soup, and chili can all fit perfectly with our program, even in the first 30 days! And for those of you who’ve added extras like avocado or cheese, you can enhance these meals even more all while staying on track. If you need help with modifying recipes to fit plan, please don’t hesitate to message me 😀

Tomato basil soup! This is a low fat healthy option that fits the first 30 day plan on LIVE FITT!👏🏽
▢ 2 ½ pounds Roma tomatoes halved lengthwise (10-12 tomatoes)
▢ 1 ¼ pounds grape tomatoes or cherry tomatoes, halved lengthwise
▢ 8 cloves garlic peeled and smashed with the back of a knife
▢ 1 pinch salt
▢ 1 pinch ground black pepper
▢ 1 large yellow onion chopped, optional
▢ 3 tablespoons tomato paste
▢ 4 cups low sodium organic chicken broth
▢ 2 cups fresh basil leaves lightly packed, roughly torn
Quarter the tomatoes and put them in a roasting pan with the garlic cloves and chopped onion, toss, and a little broth, and then season with Italian seasonings, parsley, sea salt, and pepper and then roast at 400° for 30 minutes. Add all ingredients and juices from the pan into an immersion blender and blend. Pour blender ingredients into a pan, add tomatoes paste, add the broth, add more seasonings, and boil. Add fresh basil before serving.
If you have added cream, you can add a quarter cup of cream to cream it up a little. You can also put a Parmesan cheese rind in the soup while boiling it to create creaminess without the lactose.

Asian Cucumber Salad

Ingredients:
2 large cucumbers, thinly sliced
1/4 cup rice vinegar
1 tablespoon soy sauce alternative (coconut aminos)
2 cloves garlic, minced
1 teaspoon grated ginger
1/4 teaspoon red pepper flakes
2 tablespoons toasted sesame seeds
2 green onions, sliced
1/4 cup chopped fresh cilantro
*stevia to sweeten if needed

Directions:
In a large bowl, combine rice vinegar, soy sauce alternative (coconut aminos), garlic, ginger, and red pepper flakes.
Add the sliced cucumbers to the bowl and toss to coat them evenly with the dressing.
Let the cucumbers marinate for at least 10 minutes to absorb the flavors.
Sprinkle with toasted sesame seeds, green onions, and cilantro before serving.

BEST HOMEMADE SALSA EVER 😋😋 Don't Lose This
Ingredients
1 can (28 ounce) whole tomatoes with juice
2 cans (10 ounce) Rotel (diced tomatoes and green chilies)
1/4 c. chopped onion
1 clove garlic, minced
1 whole jalapeño, quartered and sliced thin
1/4 tsp.salt
1/4 tsp. ground cumin
1/2 c. cilantro (more to taste!)
1/2 whole lime juice
1/4 teaspoon stevia *optional
Directions
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with blue corn chips or nut thins.

Fresh basil 🌿 would be a nice touch also and add some stevia to sweeten it up if needed for a healthier sugar alternative.

•air fry 390 for 6-8 minutes!
My favorite marinade is a little apple cider vinegar or lemon juice, some Cajun seasoning with garlic powder and onion powder and even fresh cilantro.

Healthy Fruit Roll Ups 🍓
Ingredients:
2 cups strawberries
Juice of 1/2 a lemon
Optional:
1/4 cup sweetener (I use stevia and only a few tablespoons)
How to make them:
1. Blend all ingredients.
2. Bring to a boil for 10 minutes.
3. Spread evenly on a parchment lined baking sheet.
4. Bake @ 170F for 3-4 hours. (Until no longer sticky to the touch)
5. Carefully peel between the original parchment paper and another piece. Slice into whatever shapes you prefer, roll them up & enjoy!
By the way.. You can do this with any fruit and they taste so delicious @
Pro tips:
If you want to skip the boiling step, you totally can but it will take 6-7 hours in the oven instead of 3-4.
If your oven doesn't go down to 170, a lot of oven style air fryers have a dehydrate setting that goes to 170°F.
