It’s been over a week now since we’ve been without power, water, or connectivity at our West Avl home. Thank you to all who have reached out - we are safe! While our house was unharmed, many in our neighborhood were not as lucky. It’s a wild thing to witness such an event that literally has never happened here… I have been humbled in the process of trying to feed Zola and help our community through this mess. Getting those last summer tomatoes. 🥹 I’ll miss them fiercely but I’m excited for all the cozy fall foods! One of the easiest ways to support your health is to eat seasonally (and locally when possible). Fruits and vegetables forced to ripen out of season, or harvested before they’re ready often contain lower levels of vitamins and minerals. Love a messy but delicious taco bowl. This one has the following, from bottom to top 👉🏽 corn tortilla, black bean/beyond beef crumble mix, Spanish style Right Rice, veggie mix featuring fire roasted frozen corn, red bell pepper, zucchini, and jalapeño, salsa, vegan sour cream, fresh cilantro 🌿

I gave up trying to eat tacos with my hands years ago. Now, I just pile everything in a bowl and make a mish mash 🤣 It’s SO good.

Meet ✨farro✨my new favorite grain to cook with! It’s hearty, nutty, and deliciously chewy. Farro is a high-fiber, high-protein type of whole grain wheat, similar to barley. Throw it in salads, soups, and grain bowls.

Things I’ve learned working with gastroenterologists over the years:
 
👉🏽When the root cause is in the gut, symptoms can manifest directly in the GI – but also anywhere in the body!
 
👉🏽Valid testing is really, really important.  Relying on assumptions, suspicions, or phony food sensitivity tests you paid $$$$$ on will likely misguide you.

I always encourage clients to season their veggies well and make them delicious. Tonight, I practiced what I preach.

As part of dinner, I planned on simply sautéing green beans in garlic and lemon… but then I didn’t stop there. I took roasted cashews, h**p seeds, nutritional yeast, whole peppercorns, sea salt, and dried garlic (can never have too much garlic 🤩) and pulsed them in my food processor until they formed a coarse crumble. Then I tossed the beans in the mixture. SO GOOD. Garlicky, salty, nutty, crunchy, deliciousness. I’d be lying if I said I didn’t eat this whole bowl. 🤤

Since it was impromptu, I don’t have an exact recipe to share. But here’s sort of what I did:

Ingredients
12oz Trader Joe’s haricots verts (whole bag)
2 whole garlic cloves, minced
Generous squeeze of fresh lemon juice
~2 TBS olive oil
~1/2 cup TJ’s roasted cashews
~1/4 cup h**p hearts/seeds
~3 TBS nutritional yeast
~1/2 tsp garlic powder
~1/2 tsp flaky sea salt
~15?? whole black peppercorns

Directions: Steam green beans until just tender. Transfer to sauté pan and sauté on high with oil and garlic. Cook for a few minutes so garlic isn’t raw, but don’t overcook the green beans and make them mushy. Remove from heat and squeeze fresh lemon juice over top. In a food processor, pulse remaining ingredients together until crumbly. Toss with green beans and enjoy! (FYI I used about half the crumble) 🌱

Tired of avocados going bad or turning brown once you’ve cut them? 🥑🥑🥑 Try making avocado crema! It will keep for days in the fridge and stays a beautiful bright green. Use it on everything from tacos to grain bowls and salads. Full recipe below👇🏽

Ingredients:
1 whole, ripe avocado
1/3 cup unsweetened cashew yogurt
¼ cup packed cilantro (or parsley if you don’t like cilantro)
Juice of 1 lime
~ ¼ cup olive oil
Pinch of salt

Directions: Add everything except the olive oil to a blender or food processor. Blend and stream in olive oil as needed to thin. Once smooth, store in the fridge for up to 4 days. Enjoy! ✌🏽🌱
