I always encourage clients to season their veggies well and make them delicious. Tonight, I practiced what I preach.
As part of dinner, I planned on simply sautéing green beans in garlic and lemon… but then I didn’t stop there. I took roasted cashews, h**p seeds, nutritional yeast, whole peppercorns, sea salt, and dried garlic (can never have too much garlic 🤩) and pulsed them in my food processor until they formed a coarse crumble. Then I tossed the beans in the mixture. SO GOOD. Garlicky, salty, nutty, crunchy, deliciousness. I’d be lying if I said I didn’t eat this whole bowl. 🤤
Since it was impromptu, I don’t have an exact recipe to share. But here’s sort of what I did:
Ingredients
12oz Trader Joe’s haricots verts (whole bag)
2 whole garlic cloves, minced
Generous squeeze of fresh lemon juice
~2 TBS olive oil
~1/2 cup TJ’s roasted cashews
~1/4 cup h**p hearts/seeds
~3 TBS nutritional yeast
~1/2 tsp garlic powder
~1/2 tsp flaky sea salt
~15?? whole black peppercorns
Directions: Steam green beans until just tender. Transfer to sauté pan and sauté on high with oil and garlic. Cook for a few minutes so garlic isn’t raw, but don’t overcook the green beans and make them mushy. Remove from heat and squeeze fresh lemon juice over top. In a food processor, pulse remaining ingredients together until crumbly. Toss with green beans and enjoy! (FYI I used about half the crumble) 🌱
