Quite a few of my friends have, or have children who do, gluten or dairy issues! Dairy free and gluten free, this creamy cajun chicken pasta is a lightened up version of a comfort food classic! A cozy recipe that's perfect for any night of the week that's wholesome and full of zesty Cajun flavor. Gluten free, dairy free, vegan option.

Meat
• 1 lb Chicken breasts, boneless skinless
Produce
• 2 tbsp Cajun seasoning instead of onion powder
• 3 cloves Garlic
• 1 tsp Garlic powder
• 1 tsp Onion powder
• 1 tsp Oregano, dried
• 1 Parsley
• 1/4 tsp Thyme, dried
• 1/2 Yellow onion, small
Canned Goods
• 1 1/2 cups Broth
• 2 tbsp Tomato paste
Pasta & Grains
• 12 oz Pasta, gluten free
Baking & Spices
• 1/2 tsp Black pepper
• 2 tbsp Nutritional yeast
• 1 Pinch Or two of cayenne
• 1 tsp Paprika, smoked
• 1/2 Pepper, large yellow or orange
• 1/2 Red pepper, large
• 1 1/2 tsp Salt
Oils & Vinegars
• 3 tbsp Olive oil
Nuts & Seeds
• 3/4 cup Cashews, raw

Here’s the step-by-step

Before you start cooking soak the cashews in hot water for at least 30 minutes, or up to an hour. If you’re in a hurry you can simmer them on the stove top for 10 minutes before using.
Start a large pot of lightly salted water to boil for the pasta. Before draining reserve about 3/4 cup cooking water.
In a small bowl mix together all the dried spices until well combined.
Cook the chicken with some of the cajun seasoning. Remove from the skillet and set aside.
Cook the veggies with the remaining olive oil until tender.
Add the spices and tomato paste, and remove the skillet from the heat while you make the cashew cream sauce.
Drain soaked cashews and add to the blender with broth, nutritional yeast, salt, and pepper. Blend on high for at least a minute – until smooth and creamy, and no pieces of cashews remain.
Return skillet to the stove top and add cooked pasta, cooked chicken, and the cashew sauce. Bring to a simmer and thin the sauce with the reserved pasta water if needed.
Taste and season to taste with salt and pepper. Top with fresh parsley if desired and serve!

What are some nuanced goals you're aiming for to develop healthier habits? Is there something specific you want to achieve this month?

I want to gain better control over my "doom scrolling" habit. It's really detrimental! I end up wasting hours when I know I could be doing so much more!

Sundays can be so stressful for me most days. However I'll do my best to relax. It's been a long, rough week. Welcome in the new week with a rejuvenated version of yourself! Favorite product with my new business, hands down, is Brew Extreme! I LOVE changing my daily coffee with a healthier version. I love how much energy I have, now. I LOVE how much healthier I FEEL again because of it! Iced, hot, with whipped cream, with creamer, no sugar for me to add to it! I honestly prefer drinking it with warmed oat milk! Such a great way to start my morning!

A life hack I wish I knew of sooner, and wish I had also adopted as a habit sooner, would be to prepare for my next day the night before. It's still working towards becoming a proper habit, but it's definitely made my mornings easier, and since I do it within the final 2 hours before I go to bed, it also helps to get my brain to shut off! I've noticed better sleep with this simple routine hack!

5 Things I LOVE!

My dog, Blake Belladonna. She has been one of the many creatures in my life that give me a reason to wake up every morning.

My cat, Misfit. He's such a do**us, but he's MY do**us. Always wants cuddles, always wants to be in your arms, and has become such an adventurous cat in the past couple years. Chronic UTI's and all, still the best ESA I could ever ask for.

My aquascaping/fishkeeping hobby. I love creating these planted landscapes and watching smaller creatures, primarily shrimp, explore, clean, and create communities within the ecosystem I helped to create and maintain.

I love coffee. That's one thing I don't think I can truly go without for too long. Everything in moderation though! However a coffee I adore is my Brew! I love the chocolate undertones it has, and it's so much healthier for you than normal coffee!!!

Finally, my friends and family. I wouldn't be here without them. I haven't had the best run in life, but I am thankful that I have found a family that adores me, and while I know I annoy them with my choices, I'm so happy to have them by my side.

I've recently begun incorporating small routines throughout my day. They are about the same tasks, everyday, but it's something I can trust to not change, I can get done, and helps to ground me from how overwhelming day to day life can be. While the routines stay the same, I understand that the circumstances around them can and will always change, however it's allowed me to have a stable foothold in an otherwise uncontrollable life I sometimes lead. It is a mindset shift I am so thankful for adopting, and it's already helping to transform my life and make me feel better day by day.

I do love me some pesto and pasta, so why not combine them into a salad?!

Here's a recipe for an Easy Pasta Salad, courtesy of https://www.loveandlemons.com/pasta-salad/

Ingredients:
3 cups uncooked fusilli pasta
2 heaping cups halved cherry tomatoes
1 1/2 cups cooked chikpeas, drained and rinsed
2 cups arugula
1 cup Persian cucumbers, sliced into thin half moons
1 cup crumbled feta cheese
1 cup fresh basil leaves, torn
1/2 cup minced fresh parsley
1/2 cup chopped fresh mint leaves
1/4 cup toasted pine nuts

Dressing:
1/4 cup extra-virgin olive oil, plus more for drizzling
3 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
3 garlic cloves, minced
1 teaspoon herves de Provence or dried italian seasoning
1/4 teaspoon red pepper flakes
3/4 teaspoon sea salt

Instructions:
1. Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente.
2. Meanwhile, make the dressing. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbes de Provence, red pepper falkes, and salt. (Note: the dressing will have a strong flavor, it'll mellow once it coats all of the pasta salad ingredients.)
3. Drain the pasta, toss it with a little olive oil (so that it doesn't stick together) and let it cool to room temp. Transfer to a large bowl with the tomatoes, chickpeas, arugula, cucumbers, feta cheese, basil, parsley, mint, and pine nuts. Pour the dressing and toss to coat. Season to taste with more lemon, salt, pepper, and/or a drizzle of olive oil, if desired, and serve.
