Pecan Pie Protein Bites!!!! These are so easy, delicious and healthy(ish)!

1/2 cup pecans + chopped pecans to roll in
1 cup pitted dates
3 tsp maple syrup
1 scoop vanilla protein powder (I used Truvani, a vanilla collagen would be great too)

In a food processor put in your pecan and blend. Add in the dates, maple syrup and protein powder and combine until it all comes together. Scoop out into little balls and roll in chopped pecans. Put in freezer to set then store in the fridge. If you don't want them as sweet use 3/4 cup dates and/or less syrup.

Who loves roasted beets?! How about warm beets and pears on your salad on a cold day? So many nutrients and so delicious! I added on here with walnuts, Cabot cheddar cheese, cilantro and easy homemade vinaigrette. I had some smoked salmon on hand which was the finishing touch, but any protein would work or even more nuts or edemame!

Recipe to Save! Fall weather means cookouts and this one is versatile, easy to prepare and healthy so it tops my list!

Cut meat (chicken, shrimp, steak) and veggies into small pieces and bacon into 1/3 strips; place in separate bowls. Toss each in olive oil or oil of choice, sea salt, cracked pepper and garlic powder.

Wrap bacon around a piece of chicken and layer on skewers with veggies as shown. I love to use red onion, organic peppers, squash, mushrooms, pineapple chunks - tons of options!

Keep a little space between the meat on the skewer to allow it to cook evenly on the grill. Serve on skewers or empty in a big bowl and put in the middle of the table!

Drool worthy AND healthier chocolate nut butter cup Halloween treat!! Make these this week in preparation for Halloween, you won't regret it! 😋

This recipe is a copycat from - all of her recipes are amazing!!

Ingredients:
Chocolate Layer
1 cup Chocolate chips - I used dark and semi sweet chocolate chips
1 tbsp Coconut Oil, melted

Nut Butter Layer
1/2 cup Nut Butter - you can use natural peanut butter, almond butter, cashew butter or even NuttZo butter
1/4 cup Honey or Maple Syrup
2 tbsp Coconut Oil, melted
A pinch of sea salt

Line a sheet pan or muffin tin with baking cups. I used silicon baking cups in two sizes to make large and miniature chocolate cups. Combine chocolate chips and coconut oil in a bowl and heat over a double boiler or in the microwave just until melted. Spoon 1-2 tsps into each baking cup, enough to cover the bottom. Then place them in the freezer. While the chocolate is setting, add all of the ingredients for the nut butter layer into a bowl and heat until melted over a double boiler or in the microwave. You don't want this to cook, just melt to combine and stir together. Pull the chocolate cups out of the freezer (once they're set) and spoon the nut butter layer over the chocolate layer. Place back in the freezer, once set, cover the nut butter with the remaining chocolate and place in the freezer one last time. Once set you can pop them out of the silicon cups to see the delicious layers... yum!! Pro tip: sprinkle the tops with flaky sea salt after you add the top layer of chocolate!

I love this Waldorf Salad to get in a variety of nutrients and satisfy my need for a CRUNCH! You can change it up based on what you have on hand or what you/your guests like most. So versatile and always yummy!

Ingredients
• 2 cups diced tart apples or 2 apples of diff color for variety
• 2 teaspoons lemon juice
• 1 cup diced celery
• 1 cup grapes, halved, I love using both colors!
• 1/2 cup walnuts or pecans, roughly chopped
• Grilled or rotisserie chicken, diced
• 1/4 - 1/2 cup mayonnaise
• 1/2 teaspoon kosher salt

Instructions
• Add diced apples and lemon juice to a large mixing bowl. Toss to coat then add celery, grapes, nuts and chicken. Fold mayo into the apple mixture and season with the kosher salt. Taste and adjust
the seasoning as you like. Chill for 1 hour or overnight - unless you're like me and you're ready to eat NOW.

Pro tip: Serve in an avocado half...mmmmm!

Options: 1 tablespoon monk fruit or sugar, toast nuts for more flavor, dried cranberries, 1/2 cup whipping cream (whipped - thanks foodiecrush.com!), greek yogurt or sour cream!
