At Integrity Wines, we love Domeaine Pelle. Paul's La Croix au Garde Sancerre Blanc is from 37 yr old vines, farmed organically(estate grown, natural yeast, hand-harvested), fermented in stainless steel, then aged in stainless and neutral oak casks. With notes of citrus and ripe stone fruit, balances acidity and weight, it pairs perfectly with seared scallops and endive, lemon oil, and fennel fronds.
