Do we really know what is Soul Food?
It might be thought that Southern food and soul food are the same but according to culinary historian, scholar and our friend Adrian Miller soul food is distinct unto itself. In an article from First We Feast, he describes it as an immigrant cuisine eaten by Black American both in and outside of the South. It often includes a variety of meats like chitlins, oxtails, and pig's feet along with fish, sweet potatoes, legumes, and dark, leafy greens like collards, kale, mustard, and turnip. These ingredients are heavily seasoned giving the dishes fatty, salty, spicy, and sweet notes. At its core, soul food is healthy but has been misunderstood due to the popularity of celebration and processed foods connected to the cuisine.
