If you are fortunate enough to get big beautiful home grown tomatoes..this is a Provençal inspired fresh tomato sauce. Peel & chop 4-5 large beefsteak tomatoes, add chopped basil, fresh garlic, sea salt and olive oil. Mix and let sit, covered, to marinate. Mix with fresh cooked pasta and vegan Parmesan cheese and Voila! So yummy!

PMS salad! Quinoa, navy beans, green onions, rainbow chard, parsley, orange pepper, pumpkin seeds, black sesame seeds and sunflower seeds. Dress with salt, pepper, dressing of EVOO+ lemon juice.

I love butter beans! I tried a new recipe- lentil and butter bean stew - delicious!
I used organic dry lentils and Camellia brand dry butter beans plus 1 tomato or 10 large cherry tomatoes, 2 cups veggie broth plus more boiling water to cook the beans, 1/2 large onion chopped, 2 carrots, chopped, 1 small zucchini chopped, 14 ounce can salt free diced tomatoes, 2 T tomato paste, smoked paprika, sweet paprika, turmeric, cumin, fresh herbs from the garden- I have rosemary & thyme. You could use canned beans. I cooked the butter beans the night before in the instant pot with the pressure cooker setting. When I make this again I will also cook the lentils ahead of time to speed up the cooking time.
I also added a dried Thai chili pepper cuz I like the heat! Garnished with diced avocado.
Yummy.
