Ingredients: (serves 2-4 people)
Calories 220 per pancake | 42g of protein
1 ½ cups all-purpose gluten free flour
1 teaspoon baking powder
¼ teaspoon raw honey
1 tablespoon vanilla extract
1 cup oat milk (or almond milk)
1 egg
1 tablespoon dairy-free butter, melted
1 scoop of your choice of protein powder
1 cup of dairy-free heavy cream
1 cup dairy-free cream cheese
1/4 cup dairy-free butter
1 cups powdered sugar (to taste)
1 teaspoon vanilla extract
1-2 tablespoons dairy-free milk & heavy cream
1 Peach (sliced)
Directions:
1. Put the flour, egg, milk, honey, baking powder, vanilla extract, butter, & your choice of protein powder into a large bowl, then whisk them to smooth the batter
2. Preheat your skillet or hot plate to medium-high, or 365 degrees. Use a large spoon to place 1 scoop of pancake mix in the skillet (to your desired size)
3. After 3-4 minutes, or once bubbles form on top of your pancakes, flip them for another 3-4 minutes. Flatten to ensure pancakes are fully cooked. Remove.
4. On medium heat, in a pot, mix cream cheese, butter, powdered sugar, vanilla extract, heavy cream, & peaches. Cook until peaches are tender to your liking.
5. Assemble pancakes & peach topping. Enjoy.
