šŸ£ Vegan Sushi Bake

Sushi Ingredients:
3 cups cooked & cooled sushi rice
2 15ozcans chickpeas, drained & smashed
1/3 cup@followyourheart vegan Mayo
1/4 cup sriracha
2 tbsp low sodium soy sauce/ tamari/coconut aminos
1 tsp old bay seasoning
2 large green onions
sliced Korean BBQ Nori sheets

Top with
Carrots, cucumbers & Daikon Radish Microgreens

Best eaten with seaweed salad & pickled ginger

To Bake:

Wash sushi rice 3 times before cooking. 3 cups sushi rice topped with 6 cups of water. Boil sushi rice until the water line is done to the rice, then cover with a lid & set aside. Place 2 tsp sugar & 1 tbs rice vinegar in the rice & stir.

In a food processor, add the canned chickpeas & ground until it’s the consistency you want. Place in a large bowl & add the rest of the ingredients. Stir well.

In a preheated oven, bake at 350 degrees for 20 minutes. Enjoy with your favorite toppings

Easy $6 homemade tomato soup

Would you eat this?

-1 container of strained tomatoes
-2 TBS Koroneiki Olive Oil from
-1/4 white onion, diced
-2 cloves garlic, minced
-1/8 cup fresh basil, chopped
-1 tsp cane sugar

In a large pot, heat the olive oil over medium heat. Add the diced onions & minced garlic until translucent, Continue to stir for 2-3 minutes. Season with salt & pepper to taste.

Pour in your Pomi tomatoes & simmer this for 15 minutes. Turn off the heat & stir in the chopped basil & cane sugar. Let stand for 5 minutes. Adjust the salt & pepper to your liking.

Top with Gideons Hydro Farm Arugula Microgreens for extra flavor

Open face pastrami Sandwich made with Turnips instead of meat

I was inspired by Turnip Pastrami Sandwich & thought I’d try it out for myself just by his video.

This one hits the home run.

Here’s my marinade:
½ cup Raw Beet juice
ā…“ cup Vegan Beef Broth
1 tbsp Soy Sauce
½ tsp Garlic Powder
½ tsp Onion Powder
1 tbsp Nutritional Yeast
1 tsp Smoked Paprika
¼ tsp Allspice Powder
1 tsp Mustard Powder
¼ tsp Salt
Peel 4 large turnips with a carrot peeler & soak in marinade overnight.

Before you’re ready to eat, on medium to high heat, cook the marinated turnips in this broth recipe

Broth recipe:
2½ cups Vegan Beef Broth
1 Bay leaf
3 tbsp Brown Sugar
½ tsp Paprika
1 tbsp Spicy Brown Mustard
2½ tbsp Liquid Smoke

Whisk all of the ingredients together in a large pot & put on medium to high heat. Drop the turnips into the broth & cook for 15 minutes. Take off of the heat & let it sit for 20 minutes.

Make a vegan Thousand Island Dressing, add your turnips to a toasted Rye bread, top with sauerkraut & pickles
