I love taters, but taters don’t love me!
Why? Potatoes have a high glycemic index and high glycemic load which causes quicker release of glucose and significant swings in blood sugar levels. This can result in depression, agitation, irritability, anxiety, low energy levels, and fatigue. What are the benefits of eating foods with a low glycemic load? It keeps energy level stable, and appetite level stable. In addition, you decrease the risk of type two diabetes, coronary artery disease, cancer, and obesity. So what’s a good substitute for potatoes? Foods with low glycemic index and glycemic load will result in more stable glucose level and will keep you satisfied. Turnips have a very low glycemic index and glycemic load and make a great substitute for potatoes. Cauliflower actually has a zero glycemic index and glycemic load. That’s why they’re such a great substitute for potatoes. A delicious recipe for mashed cauliflower involves roasting your cauliflower, onion, and garlic until it’s browned.
