EASY & Tasty- this one-pan Shrimp 🍤 and Broccoli 🥦 will be your new go-to favorite!
The only thing I love more than a simple meal? One-pan meals.
Full of flavor without a ton of cleanup 🙌
Ingredients:
1 lb. shrimp, peeled and deveined.
Zest from 1 lemon 🍋 .
1/2 t. coriander.
1/2 t. cumin.
1/4 t. Each- sea salt and black pepper.
Avocado oil 🥑 .
Instructions:
Cover sheet pan with parchment paper and pre-heat oven to 350 degrees.
Wash and chop broccoli into florets.
Toss with 2 T. oil, coriander, cumin, and 1/4 teaspoon each, salt and black pepper.
Spread into single layer on sheet pan and bake for 10 minutes.
Meanwhile, toss the shrimp with an additional 2 T. oil, zest from 1 lemon, 1/4 teaspoon each, salt and black pepper.
Add to the pan with broccoli, and toss together. Roast for an additional 10 minutes, tossing halfway through so everything cooks evenly.
Serve over steamed rice cauliflower.
