✨ Gluten Free, Flavor Full ✨

One of the best parts of living the is discovering just how amazing gluten free food can be when you get creative in the kitchen! 💚

🍔 Smashburger + crispy fries = comfort food heaven without the gluten.
🔥 Slow cooker buffalo chicken = the easiest “set it & forget it” dinner with ALL the flavor. We made buffalo chicken tacos, SO good. 😋
🥙 Chicken gyros with Greek salad = fresh, healthy, and proof that gluten free doesn’t mean boring!

These meals remind me daily that being a celiac mom and wife doesn’t have to be about what we can’t eat — it’s about what we CAN enjoy together as a family. 🥰

🌾💚 National Celiac Disease Awareness Day! 💚🌾

Living with celiac isn’t just “skipping bread” — it’s a daily battle to protect our health, our energy, and our joy while navigating a world full of hidden gluten. As a mom and wife, I don’t just fight this battle for myself, I fight it for my family too — making sure every meal, every snack, and every celebration is safe and delicious so I can be the best me that I can, for them. 🥰

Celiac isn’t a choice, but spreading awareness is! 💪 The more people understand, the safer and easier life becomes for those of us living gluten free. So today, let’s:

Thin chicken breasts, topped with rosso pesto and rolled up with melty cheese and spinach inside. Baked until golden, bubbly, and absolutely delicious. 💃

Sometimes I’m a “homemade from scratch” mom 👩‍🍳✨… and other times I’m a “thank goodness for gluten free frozen foods” mom 😅🙌.

This week? Definitely the second one. Between gooey grilled cheese + Panera soup, Udi's cheesy lasagna , and Sweet Loren's double chocolate cookies (yes, ALL gluten free 😍) — the freezer totally saved the day.

Because let’s be honest… some nights it’s less about being fancy and more about everyone being fed without me getting glutened. 💕

Another weekend come and gone

One thing I’ve learned on this journey is how important it is to fuel our bodies the right way — especially first thing in the morning. Because of malabsorption cause by Celiac, our bodies don’t always soak up nutrients the way they should, which can leave us feeling drained before the day even gets going.

That’s why I’ve been loving protein shakes for breakfast! 🥤💪 They’re quick, gluten-free, and packed with the nutrients my body actually needs to keep up with the chaos of being a wife, mom, healthcare worker and everything in between. Plus, I can sneak in fruits, extra greens, and even a scoop of collagen to help fill in those gaps celiac can leave behind.

Here’s to starting the day nourished, energized, and gluten-free strong! 💜✨

✔️ Crispy chicken tender salads made GF by using Caulipower brand chicken tenders, drizzled with your favorite dressing (I use Ken's Buttermilk Ranch)

✔️ Loaded nachos with corn tortilla chips, ground beef, cheese, onions & peppers – 100% gluten-free and totally touchdown-worthy! 🌮🧀

Totally customizable and totally delicious.

Some people diagnosed with Celiac also have to stay free of ingredients containing corn, oats, soy, yeast or dairy. It can mimic gluten due to the similar protein structures potentially causing a similar reaction. Symptoms of a Celiac being exposed to gluten range everywhere from gastrointestinal issues to neurological problems.

Sometimes I just want to grab takeout and call it a day… but then my brain reminds me: “Hey girl, gluten’s lurking in that soy sauce.” 😅

So what’s a Celiac mom & wife to do? We whip up our own General Tso’s Chicken – gluten-free edition! 🥢
Crispy chicken, sweet & tangy sauce, and zero tummy drama = everyone’s happy. 🙌

Because let’s be real, nothing says “love” like making Chinese takeout at home while simultaneously refereeing toddler meltdowns and trying not to burn the rice.
