Recipe of the Week 🍓Mixed Berry Oatmeal Bake
I made this yesterday for a Divine Mercy Sunday brunch at a friend’s home, and it turned out so good I knew it needed a spot in my Leaner for Life recipe database 🙌This is exactly the kind of recipe I’m always looking for—simple, make-ahead, and packed with protein to support strength, energy, and staying active as we age.
🛒 INGREDIENTS
2 cups oats
4 scoops vanilla protein powder*
1 tsp baking powder
1/2 tsp salt
3 cups mixed berries (divided)
1/3 cup nuts (I love slivered almonds)
1/3 cup unsweetened shredded coconut
1 cup milk
1/4 cup honey
4 eggs1 tsp vanilla
2 tbsp lemon juice
👩🍳 DIRECTIONS
Preheat oven to 350°F.
Grease an 8½ x 11 casserole dish with oil.
In a large bowl, mix oats, protein powder, baking powder, and salt.
In a separate bowl, whisk eggs, milk, honey, vanilla, and lemon juice.
Add wet ingredients to dry and stir until well combined.
Fold in nuts, coconut, and 2 cups of berries.
Pour into casserole.
Top with remaining berries (and extra nuts/coconut if desired), lightly pressing into the mixture.
Bake 20–25 minutes, until set and lightly golden.
🍽️ Serving Ideas
Serve warm with fresh fruit, yogurt, and a drizzle of maple syrup.Also delicious cold or reheated—perfect for leftovers or meal prep!
