Chicken Cordon Bleu
Ingredients
2 small chicken breasts
4 slices swiss cheese
4 to 6 slices of ham
1/2 cup panko breadcrumbs
1 1/2 tbsp butter
1 1/2 tbsp flour
2 cups milk
2 tbsp Dijon mustard
3 tbsp parmesan cheese
1 egg
1 1/2 tbsp Dijon mustard
3 tbsp mayonnaise
Salt and pepper to taste
Instructions:
Preheat the oven to 400 degrees Fahrenheit.
Prepare the cheese and the ham by folding the cheese in half and placing two pieces inside each chicken breast. Place two slices of ham on top of the cheese.
Close the pocket and seal with two toothpicks.
Sprinkle salt and pepper.
Dip the chicken in an egg mixture and then coat with breadcrumbs.
Bake for 20 to 25 minutes until the chicken is cooked through.
While the chicken is cooking, prepare the sauce by melting the butter in a pan.
Stir in flour until the mixture clumps together.
Whisk in the milk, working out the lumps as you stir.
Add the dijon mustard, garlic powder, parmesan cheese, and salt and pepper to taste.
Serve the chicken with the sauce.
