💡Tip: For yogurt, look for one that is high in protein and low in added sugar! One of my favorites is Siggi's icelandic yogurt - yum!! I also use as a starter to make my own yogurt in my instant pot!

💡Pro Tip: If you make a sandwich, toast the bread first so it doesn't get soggy! I love to use 100% whole wheat sandwich thins for a lighter bread option.

Leftover Cranberry Turkey Salad 🥙

INGREDIENTS
•4 cups leftover cooked turkey meat, shredded 🍗
•5 stalks celery, chopped
•1/4 red onion, minced 🧅
•1/3 cup walnuts, chopped
•1/3 cup leftover cranberry sauce (or cranberry relish)
•1/4 cup mayonnaise
•1/2 cup whole milk plain yogurt
•salt and pepper to taste 🧂

DIRECTIONS
1️⃣ Combine turkey, celery, red onion, and walnuts in a large mixing bowl.
2️⃣ Add mayo, yogurt, cranberry sauce, salt and pepper.
3️⃣ Serve on a sandwich, over salad, or with chips as a dip.

Korean Chicken Tostadas 🌮🍐

This is one of our FAVORITE freezer ❄️ meals! I like to buy chicken breasts in bulk and put these and other freezer meals together to make healthy weekday cooking FAST and EASY! 🤩 We love to put the leftover chicken over salad for lunches. 🥗

I paired the tostadas with the yummy Vegan Ranch salad kit from and it was a great combo!

Serves 4-5

INGREDIENTS
•1.5 lbs chicken breast
•2 fresh sliced pears 🍐 or 1-15 ounce can of pears, drained (canned in water or 100% juice)
•1 tbsp minced garlic 🧄
•1 tbsp ginger paste
•4 tbsp coconut aminos 🥥 (or 2 tbsp less-sodium soy sauce)
•Side salad (e.g. bagged salad from TJ's or another favorite) 🥗
•8-12 corn tostadas
•optional taco toppings: sliced fresh pear, matchstick carrots🥕, fresh thinly sliced cabbage, baby spinach 🌱, or avocado 🥑

DIRECTIONS
1️⃣ Add chicken breast, pear slices, garlic, ginger, and coconut aminos to instant pot. 2️⃣ Cook on high pressure for 20 minutes.
3️⃣ While cooking, mix together salad to serve on the side. Then, heat tortillas in a pan on the stove.
4️⃣ Once done, quick release instant pot and check temperature of chicken (minimum 165F). Let chicken cool for a few minutes with the lid open, then use a hand mixer to shred chicken.
5️⃣ Serve and enjoy!

To make this a freezer meal, put ingredients from step 1 into a freezer-safe container (bag, Pyrex, etc). Be sure to label with the name and date, and use within 6 months. To cook from frozen, thaw overnight in the fridge then dump into instant pot. Skip to step 2!

I love making extra food and freezing portions for later. These were both made just a few weeks ago but now we can have them both fresh again this week with just a little reheating. 🔥
