Garlic Roasted Radishes

Roasting radishes transforms this sharp, peppery vegetable into a sweet, tender side dish. A beloved method for mellowing the intense flavor, this preparation brings out a potato-like texture with a delicate sweetness, making it a perfect low-carb alternative for many meals.

1 pound fresh radishes, about 2 bunches
1 tablespoon olive oil
½ teaspoon salt
1 teaspoon garlic powder or 2-3 cloves minced
Cracked black pepper, to taste
Fresh chopped parsley, dill, or chives (optional garnish)

Directions:
1 Preheat oven to 425℉.
2 Wash, dry, trim, and halve radishes top-to-bottom. Quarter if large.
3 Toss radishes in a bowl with oil, salt, garlic powder, and pepper.
4 Arrange radishes cut-side down on a baking sheet without overcrowding.
5 Roast for 15 minutes, toss, then roast another 10-15 minutes until golden and tender.
6 Garnish with fresh herbs if desired and serve warm.
