📚 It’s officially in print - and I just got my copy! Over the past year, I had the opportunity to serve as one of two primary revision authors for the newest edition of the National Restaurant Association' Nutrition textbook.

I immensely enjoyed this opportunity to update the content to reflect current research and provide real-world context and considerations the intersection of foodservice and public health—including two areas I’ve devoted much of my career to: food security and teaching kitchens. 🌱👩‍🍳

Now, future foodservice and culinary professionals will gain exposure to the prevalence of food insecurity within our communities, as well as an introduction of teaching kitchens as a viable career path!

Food doesn't have to be elaborate to still be pretty. Simplicity has its own charm. Take, for example the humble egg wrap below.

There are easy ways to make food look good without much effort - a quick and easy one is the use of multiple colors.

Why does it matter what our food looks like if it's all going to the same place, you ask? Because eating involves all of our senses- and we eat with our eyes first!

How a food looks and smells is often the first stimulation of our appetite and determines if we actually want to eat what's in front of us or not. One of the secrets to enjoying nutritious foods, is to lean in to the sensory qualities that you enjoy- one of which, could be visual appeal.

Featured in the picture: A pinch of shredded cheese atop a fried egg, layered over two roasted plum tomatoes, sliced avocado, and a smear of savory cashew cream - all on a whole week wrap. This took me all of 5 minutes to make- I assembled the wrap while the egg was cooking and nearly all of the ingredients were leftovers from other things I made this week ✨👩‍🍳
