Low-Carb Sheet Pan Chicken & Peppers
A diabetes-friendly, low-carb dinner that’s full of flavor and easy to make!
Ingredients:
1 lb 2 oz (510g) boneless, skinless chicken breasts, sliced
1 red bell pepper, sliced
1 yellow or orange bell pepper, sliced
1 small red onion, in thin wedges
2 garlic cloves, minced
2 tbsp + 1 tsp olive oil
1½ tbsp fresh lime juice
Spice blend: 1½ tsp chili powder, 1½ tsp cumin, 1½ tsp dried oregano, ¾ tsp smoked paprika, pinch of cayenne (optional), 1 tsp salt, 1 tsp black pepper
Instructions:
Preheat oven to 415°F (213°C). Lightly grease a baking sheet.
Mix all spices in a small bowl.
Spread chicken, peppers, onion, and garlic on the sheet.
Drizzle oil and sprinkle spice mix. Toss to coat.
Bake for 28–33 minutes until chicken is cooked through and veggies are tender.
Drizzle lime juice before serving.
Enjoy as is or with low-carb tortillas and avocado!
