I quit counting calories a long time ago. These days, I just focus on colorful plant foods that contain protein and fiber. Since I get asked often what I eat, I thought I’d share some of my recent meals…
I typically have a savory breakfast that includes tofu or tempeh, my homemade sourdough bread, avocado and/or fruit. Some days, I’ll switch it up and have a hearty bowl of oats with added protein powder and very ripe banana for sweetness.
I try to eat beans at some point every day, and lately I’ve really been enjoying air-fried chickpeas seasoned with sea salt, garlic, and nutritional yeast. They’re a perfect way to satisfy crunchy, salty cravings.
Lunch is usually leftovers from dinner the night before, or I’ll have a bean & rice/quinoa bowl with some added veggies, like lettuce, tomato, onion, cilantro, etc. and a delicious sauce, like my cashew aioli.
Recently, I’ve been saving time and energy on dinner by making a big pot of a vegetable-heavy soup, like cabbage & white beans or minestrone. Something with a tomato broth really warms my soul when the weather starts to transition into autumn. As soups go, you also can’t go wrong with an Asian inspired creamy miso ramen. I just add a can of coconut milk to my miso broth and mix in noodles, pan-fried tofu, mushrooms, seaweed, carrot, and herbs, then top with sesame oil and some spicy peppers. We are all about Asian flavors in this house.
I typically have tacos at least once per week, sometimes more. And chalupas are on repeat around here, because I’ll usually have refried beans on-hand, and I tend to bake lots of shells in order to have extra around for a super quick meal. Just warm the beans, smear them on, and top with shredded lettuce, tomato, and guac. Boom. 💥 Dinner.
I don’t have tons of time to make elaborate meals, so most of what I eat is quick (or quickish) and uses simple ingredients. I don’t snack a lot, but if I do, it’s usually a protein bar or smoothie, or those crunchy chickpeas.
Eating healthy doesn’t need to be dogmatic or boring. I enjoy finding ways to elevate the nutritional value of foods that I love, so that nothing is strictly off limits. Food should be fun AND good for you.
