Https://www.facebook.com/groups/JustTakeALookThis is one of my all time favorite things to make for dinner during the cleanse, then also for a healthful dinner to keep me on track throughout the year.
Marinated Roasted Vegetables
You may use any variety of veggies that you have on hand, but I tend to use:
1 sweet potato peeled and sliced
1/2 package of baby portabella mushrooms, quartered
1 zucchini sliced
10 thin spears of asparagus cut into 2 inch pieces
1 purple onion cut into wedges
1 red, yellow, or orange sweet pepper cut into 2 inch pieces
1 yellow squash
1 half package of cherry tomatoes
You could also add carrots, brussel sprouts, broccoli, pearl onions, sweet onion or just about any other veggie you have!
Place all prepped veggies in a large bowl
Toss until thoroughly coated with olive oil, garlic powder, onion powder, dried rosemary, dried basil, and oregano.
Cover and let sit at room temp for at least 3 hours to marinade.
Place on foil on baking sheet
Bake at 375 for 30-40 minutes until soft and just beginning to carmelize.This is one of my all time favorite things to make for dinner during the cleanse, then also for a healthful dinner to keep me on track throughout the year.
