Today I had the amazing opportunity to meet with state representatives at the Massachusetts State House and rally for the funding of the Healthy Incentive Program.

The Healthy Incentives Program is a state-funded program that provides SNAP participants with extra funds to purchase fresh fruits and vegetables from their local farmers. The funding for this program was recently cut from $40-$80 per household per month to only $20 per month. For many, this cut is detrimental to their ability to afford healthy and nutritious foods. This also affects our local economy and our farmers.

Today we asked Legislators to hear our voice, and push to ensure that funding is supplemented back into this program for 2025 and that the budget fully funds HIP in 2026.

I’m so thankful for this opportunity and appreciate the for giving me the chance use my voice today. Also thank you to for the amazing tour of the state house. Your time was so appreciated!

Perfect meal for the cooler temps we’ve been having 😍

🌟Dietary tips🌟
If you want to lower the fat/calories:
-Swap out heavy cream for half and half.
-Use chicken breast instead of thighs.
-Leave out the Parmesan cheese (but I wouldn’t 😋)
-Make it vegetarian and leave out the chicken. The mushrooms are hearty by themselves.

Celebrated my dad’s 68th birthday yesterday and of course, the man wanted steak and potatoes for dinner😂

I decided I wanted a little more color, so I put mine over arugula, tomatoes and chickpeas. Topped off with a little bit of ranch and hot sauce 🔥

Nutritious meals don’t need to be complicated. Most of the time you just need to add a little extra to make it complete 🍛

Blackberry coconut cashew bars!🥥 Vegan, gluten free and surprisingly tasty bars that are the perfect snack to stock in your freezer before the summer is over.

Blackberries are seriously nature’s candy and if you’re fortunate enough to find some fresh bushes, I highly recommend trying out this recipe. Although, store bought is just as tasty 😊

Instructions:

1. Layer a loaf pan with parchment paper and set aside
2. In a food processor, blend 1 cup dates, 1 cup cashews, 3 tbsp coconut oil, and 1/4 cup shredded coconut. Place into loaf pan and press firmly until contents are spread evenly. Place in freezer while you make the next layer.
3. Clean processor, then blend 1 cup cashews, 1/3 cup coconut cream, 1/2 cup shredded coconut, and 1/4 cup agave nectar or honey. Blend until smooth. Spread second layer evenly over bottom, then place in freezer again.
4. For final layer, blend 6 oz blackberries, 2 tbsp agave nectar or honey, 1/2 cup coconut cream and 1/2 shredded coconut. Spread top layer over everything.
5. Place in the freezer for at least 2 hours before slicing.

Contents last for about a week in the freezer.

EAT THE DAMN FRUIT.

I can’t tell you how many times I’ve been asked “What fruit has the least amount of sugar?”. Or how many times I’ve heard “I can’t eat fruit because it makes me gain weight”, “Fruit causes my blood sugar to spike”, “Fruit has too much sugar in it”.

My response to these statements is typically followed by a series of questions because nutrition is individualized. One answer doesn’t fit all. What’s your medical history? What are you pairing with the fruit? When are you eating the fruit? What does the rest of your diet look like?

Most of the time, the fruit isn’t the issue.

Fruit has a number of health benefits. Many studies have shown that a diet high in fruit, such as strawberries and blueberries, can help to lower the risk of heart disease, promote healthy aging and even have anti-diabetes effects. Not to mention, fruit, like bananas, is ideal for active individuals due to their content of digestible carbs, as well as magnesium and potassium, which act as electrolytes.

So the next time you fear eating some fruit, don’t ☺️ Instead ask yourself how is the fruit helping to nourish my body. You may be happier because of it ☺️

⁣Hi everyone! 👋🏻 it’s been a while but I’m back! And I’m back with a bomb little recipe 🔥⠀

These roasted Brussel sprouts topped with bacon, creamy blue cheese and tangy balsamic glaze are packed with flavor and only take minutes to prep. ⠀

What you need:⠀
32oz Brussel sprouts sliced in half or 1/4’s depending on size⠀
1/2 onion diced ⠀
1lb bacon chopped⠀
Blue cheese or goat cheese⠀
Balsamic glaze⠀
Salt n pepper⠀
Garlic powder⠀
Olive oil⠀

Preheat oven to 350F.⠀

Place sliced Brussel sprouts and diced onions in a large bowl and coat with olive oil, salt, pepper and garlic powder. Mix it up!⠀

Add chopped bacon to hot pan and cook until bacon starts to firm up but not completely cooked. Remove from heat. ⠀

Add Brussel sprouts, onion and bacon to a large baking sheet. Bake for 30-35 minutes or until sprouts and bacon are to desired crispiness.⠀

Remove from oven and place in serving bowl. Top with cheese and balsamic glaze. ⠀

So good. So easy. 🤤⠀
