Apple Carrot Quinoa Balls:

1 cup (loosely packed) grated carrots
1/2 cup (packed) grated apple
1/2 cup quinoa flakes
1/3 cup creamy seed butter
3 - 4 Tbsp pure maple syrup
1 Tbsp ground chia seeds
1 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/4 cup dries fruit (raisins)
Preheat the oven to 180 / 350 F, and line a baking sheet with parchment paper.
Grate the carrots and apples.
In a large bowl, combine the carrot and apple with the dry ingredients, and then mix in the sunflower seed butter and maple syrup.
Stir the combine thoroughly and form a cohesive mass of dough. Then mix in the raisins.
Using moist hands, roll tablespoons of the dough into balls and place them 1-2 inches apart on the lined baking sheet.
Bake the balls for about 20 minutes.
Cool completely, and store in an airtight container in the fridge.
Makes about 18 moist and chewy balls.

Don't forget this time of year to drink your water and stay hydrated!
Here's an easy hot drink to sit in front of the fire with!
In mug pour one tablespoon of honey. Then sprinkle in one teaspoon or more or cinnamon and incorporate into the honey. Pour boiling water into mug stir and relax! Add mint or lemon too!

Avocado and Mango Salad (it's DELICIOUS!)

1 lemon: half
2 avacado: peel and thinly slice: rub with lemon
1 Mango (or papaya): slice into segments

Combine in a small bowl:
1 lg red onion, thin sliced
1/2 C lemon juice
pinch of salt

Whisk in another small bowl:
1/2 cup olive oil
2 tbsp lemon juice
salt and pepper

Toss with half dressing: agrula or lettuce leaves (or my fav: sprouts!)
Arrange greens and alternate mango with avocado and spoon dressing onto slices and top with onion.
