So…..Yesterday marked the day of my 2nd trip through the Bible!!!🎉🎉📖📖 WaHoo!!!🥳🥳

I tell you this because it has been the most life-giving& life-changing thing I have ever done!! The 1st time I went through, it took me 2 years b/c I had never read through the Bible& really wanted to chew on smaller passages!! But this time, my goal was to do it in a year! &Not to say that I read the Bible all the way through (B/c I already did that), but to grow in the knowledge& character of God! I didn’t start on January 1st, but on a Wednesday! Smack dab in the middle of February! &You can to!!

The biggest thing that the Lord has taught me is that when we read God’s word, we know God more,& when we know God more, we know His character more, &when we know His character more, we will fall more& more in love with Him! Who you spend the most time with is who you will become!! &1 thing I’ve learned is that you make time for things that are important to you! Life doesn’t slow down, and you have to decide everyday what you are going to do when you wake up!

I thought it was funny b/c I always have a hard time packing light& people’s 1st suggestion would be to get a smaller notebook, pick 1 or 2 pens instead of the whole bag, and maybe travel with a smaller Bible! But, I needed& wanted it all, so I always made a way to make it happen!!🤣🤣

Sooooo…..here are a few fun pictures of a few places I got to take my Bible with me this year: St. Simons Island, Italy, Belize, Hawaii, &Oxford!!

Shoutout to for helping make reading through the Bible a lot more fun& a lot easier to understand!!

Whole 30 Chicken & Bacon Alfredo Casserole!!!❄️

Ingredients:
1 lb cooked chicken, shredded (about 2.5 cups): I roasted chicken breast& seasoned them with Emeril’s chicken rub!
6 slices cooked and chopped bacon
3–4 cups hash browns
2 cups broccoli florets
1.5 cups alfredo sauce (1 jar of Primal Kitchen)-swipe to see brand!
1/2 white or yellow onion, diced
Salt& Pepper- heavy on the hand ;)
*I added 1/2 of minced garlic to each bowl I made
*Parmesan cheese can also be added to the top

Instructions:
If you have not already done so, fry the bacon and set aside to cool and then chop. Preheat the oven to 350 degrees F!
Grease a 3 or 4 quart casserole dish with a thin layer of cooking oil spray. Add the chicken, bacon, broccoli, hash browns, onion, alfredo sauce and salt to the dish!
Use a spoon to mix all of the ingredients around and combine! Spread it into an even layer in the dish and then place it into the oven!
Bake for 35 minutes and remove from the oven!

Cauliflower Soup for the winter weather coming in!!!❄️

The Soup:
2 Heads Cauliflower (Cut Into Small/Medium Florets)
4 Garlic Cloves (Skin On)
2 Shallots (Cut In 1/2)
Olive Oil
3 Thyme Sprigs
Sea Salt & Black Pepper
1 liter Chicken Stock
1 Squeeze Lemon Juice The Garnish
Truffle Oil
Fresh Thyme (Stems Removed)
Black Pepper

Directions:
In a large roasting pan add cauliflower, shallots, garlic and thyme
Season with salt and pepper and drizzle with olive oil
Roast at 450 for 30ish minutes
Remove from the oven
Squeeze out roasted garlic into a medium pot and add remaining pan ingredients (remove thyme sprigs)
Add 1 liter of hot chicken stock to the pot, simmer for 10-15 mins until cauliflower is very soft.
Puree using a hand blender, keep blending to get a really velvety soup.
Add lemon juice and mix to combine
Ladle into serving bowl and garnish with fresh thyme, a drizzle of truffle oil, fresh ground black pepper, and Parmesan cheese (if you’d like)!
