Sticky Date Oatmeal with Toffee Drizzle šŸÆšŸ„£ā€Ø
Basically sticky toffee pudding… but in breakfast form.

This cozy, one-pot oatmeal is loaded with caramelized dates, warming spices, and finished with a buttery date-toffee drizzle. Perfect for cold mornings, long rides, or anytime you want comfort + carbs.

Oatmeal
* 1 Tbsp unsalted butter (or ghee/coconut oil)
* 6 Medjool dates, pitted and chopped
* ½ cup water
* 1¼ cups milk (dairy or plant-based)
* ¾ cup old-fashioned rolled oats
* ¼ tsp vanilla extract
* ¼ tsp ground cinnamon
* ā…› tsp ground cardamom
* Pinch of sea salt

Toffee Drizzle
* 1-2 Tbsp reserved date paste (from oatmeal)
* 1–2 tsp butter
* 1 tsp nut butter
* 1–3 Tbsp milk
* Pinch of salt
* Drop of vanilla (optional)

Toppings
* 2 Tbsp chopped walnuts
* 1 Tbsp h**p seeds
* Flaky sea salt

How to make it:
1ļøāƒ£ Brown butter, add chopped dates + water, simmer and mash into a caramel-like paste
2ļøāƒ£ Scoop out 1-2 Tbsp hot date paste and add to a small bowl, stir in butter, nut butter, milk + salt → toffee drizzle
3ļøāƒ£ Add oats, milk, vanilla, cinnamon, and cardamom to the pot with remaining dates and simmer until creamy
4ļøāƒ£ Divide oatmeal between bowls, drizzle with the toffee sauce, and top with walnuts, h**p seeds, and a pinch of flaky sea salt.

Big thanks to and crews for showing up ready to bake and ready to give back!

These tight-knit groups worked hard, diligently, and compassionately to make something special — homemade granola with a purpose.

These fresh made batches went straight into Holiday Meal Boxes, helping support over 450 local kids and families right here in Summit County.

Together, we made over 450 mini bags of granola, spreading warmth, cheer, and real nourishment throughout our local community.

Thank you to everyone who helped raise money to help us buy the ingredients and for donating their kitchen space to us.

Raspberry Chia Coconut Oatmeal 🄣🄄

Start your morning with this cozy, fruit-forward oatmeal topped with naturally sweet chia raspberry jam.

Oatmeal Base
1½ cups sprouted steel-cut oats
4½ cups liquid (water, unsweetened almond milk, or a combination)
1½ cups full-fat coconut milk (from a can)
½ tsp fine sea salt
¾ tsp ground cinnamon
¼ tsp ground cardamom (optional)
Zest and juice of 1 large orange
3 Tbsp almond butter

Raspberry Chia Jam
3 cups raspberries (fresh or frozen)
¼ cup maple syrup
Pinch of flaky sea salt
3-4 Tbsp chia seeds

Toppings
Toasted coconut chips and almond slices
Morning Shift Chocolate Chunk Granola
H**p and chia seeds

Simmer oats with water or almond milk, coconut milk, salt, cinnamon, and cardamom for 25–30 minutes until creamy. Stir in orange zest, orange juice, and almond butter.

Meanwhile, cook raspberries with maple syrup for 5–7 minutes until broken down. Remove from heat, stir in chia seeds and a pinch of flaky salt, and let thicken.

Spoon oatmeal into bowls, top with raspberry chia jam, swirl if desired, and finish with coconut chips, granola, or h**p seeds.

The real story behind the Bakin’ Biker ā€˜26 Cookbook. šŸ“—šŸ‘‡

This past year has been one of the biggest adventures of my life. After losing my full-time job, I stepped into a new full-time role as a youth mountain bike program director and coach—meaning I spent my summer on the trails with kids, running camps, leading trail work, and helping develop young riders for their ride ahead in life. Add in moving into a new home and welcoming our second child, and life never slowed down for a second.

Through all of it, food was my anchor. I continue to rely on a diet built around fresh, whole, seasonal ingredients—foods that support my energy, recovery, and overall health while juggling long days on the bike and even longer nights as a new parent. That steady fuel is what inspired this year’s cookbook.

The 2026 edition of Bakin’ Biker features 110+ simple, packable, nutrient-dense recipes designed to support real life in motion. Whether you’re riding daily, chasing kids, or just trying to stay balanced, these recipes help keep you nourished, energized, and ready for whatever’s ahead. You’ll find everything from portable snacks and recovery drinks to easy dinners, pre-ride breakfasts, and everyday fuel you can rely on.

But this cookbook isn’t just recipes. I’ve added performance fueling tips, everyday nutrition guidance, a grocery checklist, and meal-building strategies—practical tools to help you feel confident in the kitchen and on the bike.
