This recipe is packed with fresh ingredients, healthy fats, and loads of flavor. It’s a perfect addition to your 100-day journey—low-carb, nutrient-dense, and incredibly easy to make!
Ingredients:
2 medium zucchinis (spiralized into noodles)
1 tablespoon olive oil (for sautéing)
2 cloves garlic, minced
1 cup fresh basil leaves (packed)
1/4 cup pine nuts
1/4 cup grated Parmesan cheese (plus extra for topping)
1/4 cup olive oil (for pesto)
1 tablespoon fresh lemon juice
Salt and pepper to taste
Instructions:
Prepare the zucchini noodles:
Use a spiralizer to turn the zucchinis into noodles (also known as zoodles). Alternatively, you can use a vegetable peeler to create thin ribbons.
Place the noodles on a clean towel or paper towels to remove excess moisture.
Make the pesto:
In a food processor or blender, combine the fresh basil, pine nuts, grated Parmesan, and garlic.
Pulse until everything is finely chopped.
With the processor running, slowly drizzle in 1/4 cup of olive oil until the pesto is smooth and creamy. Add salt and pepper to taste.
Sauté the zucchini noodles:
Heat the olive oil in a large skillet over medium heat.
Add the zucchini noodles and sauté for 2-3 minutes, just until they soften slightly. Be careful not to overcook, as zucchini can release moisture.
Remove the noodles from the pan and set them aside.
Toss the noodles with pesto:Add the prepared pesto to the zucchini noodles and toss well to coat evenly.
Finish and serve:
Plate the zucchini noodles and top with extra Parmesan cheese and a squeeze of fresh lemon juice for a burst of brightness.
