Welcome Back to Our 100 Days Weight Loss Recipe .

We’re so glad you’re here and ready to dive into another delicious, nutritious recipe to support your weight loss journey. Today, we’re making a simple and flavorful dish that’s both light and satisfying: Zucchini Noodles with Pesto!

This recipe is packed with fresh ingredients, healthy fats, and loads of flavor. It’s a perfect addition to your 100-day journey—low-carb, nutrient-dense, and incredibly easy to make!

Ingredients:
2 medium zucchinis (spiralized into noodles)
1 tablespoon olive oil (for sautéing)
2 cloves garlic, minced
1 cup fresh basil leaves (packed)
1/4 cup pine nuts
1/4 cup grated Parmesan cheese (plus extra for topping)
1/4 cup olive oil (for pesto)
1 tablespoon fresh lemon juice
Salt and pepper to taste

Instructions:

Prepare the zucchini noodles:

Use a spiralizer to turn the zucchinis into noodles (also known as zoodles). Alternatively, you can use a vegetable peeler to create thin ribbons.
Place the noodles on a clean towel or paper towels to remove excess moisture.

Make the pesto:

In a food processor or blender, combine the fresh basil, pine nuts, grated Parmesan, and garlic.
Pulse until everything is finely chopped.
With the processor running, slowly drizzle in 1/4 cup of olive oil until the pesto is smooth and creamy. Add salt and pepper to taste.

Sauté the zucchini noodles:

Heat the olive oil in a large skillet over medium heat.
Add the zucchini noodles and sauté for 2-3 minutes, just until they soften slightly. Be careful not to overcook, as zucchini can release moisture.
Remove the noodles from the pan and set them aside.
Toss the noodles with pesto:Add the prepared pesto to the zucchini noodles and toss well to coat evenly.

Finish and serve:

Plate the zucchini noodles and top with extra Parmesan cheese and a squeeze of fresh lemon juice for a burst of brightness.

Congratulations on showing up today—now it’s time to work that core! 💪 Day 2 is all about building strength, stability, and definition with four ab-sculpting moves. Whether you’re new to these exercises or looking to perfect your form, today’s workout is designed to challenge and motivate you. Let’s break it down:

1️⃣ Plank Hold
Start strong with a plank hold to activate your entire core. Keep your body in a straight line from head to heels and hold tight. You got this!

2️⃣ Bicycle Crunches
Let’s engage those obliques! Slow and steady wins here, so take your time and twist fully to feel the burn.

3️⃣ Leg Raises
This one’s for your lower abs—keep those legs straight and controlled as you lift and lower, making each rep count.

4️⃣ Russian Twists
