Hubby was craving pizza today—and honestly, same. 😅
But I wasn’t about to derail my goals, so I got creative and made a Protein Pizza Bowl instead.
And let me tell you… total game changer. 🍕🔥
Protein Pizza Bowl (quick + delicious)
You’ll need:
1 cup cooked lean ground turkey/chicken (or beef)
1/2 cup marinara or pizza sauce
1/2 cup shredded mozzarella (or low-fat)
Veggies: peppers, onions, mushrooms, spinach, olives (your call!)
Turkey pepperoni or chicken sausage (optional but elite)
Italian seasoning, garlic powder, red pepper flakes
How to make it:
1. Layer sauce + protein + veggies in a bowl.
2. Top with cheese + pepperoni + seasonings.
3. Microwave 1–2 min or bake at 400°F for ~8–10 min until melty and bubbly.
Finish with: fresh basil, chili flakes, or a drizzle of hot honey if you’re feeling fancy.
Pizza vibes, protein goals. ✅

Sweet, tangy, and packed with flavor – perfect for salads, snacks, or straight from the jar!
Ingredients:
6 medium beets (washed and trimmed)
1 cup white vinegar
1 cup water
1/2 cup granulated sugar
1/2 teaspoon salt
1/4 teaspoon ground cloves (optional)
1/2 teaspoon whole black peppercorns (optional)
1 cinnamon stick (optional)
Instructions:
Boil the beets: Place beets in a large pot, cover with water, and boil until tender (about 30–40 minutes). Drain and let cool.
Peel and slice: Once cool, peel the skins off (they should slide off easily). Slice into rounds or wedges.
Prepare the brine: In a saucepan, combine vinegar, water, sugar, salt, and optional spices. Bring to a boil, stirring until sugar dissolves.
Pack the jars: Add sliced beets to sterilized mason jars. Pour the hot brine over them, leaving about 1/2 inch of headspace.
Seal and chill: Seal the jars with lids. Let cool, then refrigerate for at least 24 hours before eating. (They taste even better after a few days!)
Keeps up to 4–6 weeks in the fridge.

I don't know about you guys but I can't trust myself to measure exactly half a cup every time I go to get some of this ice cream. I'm like that kind of looks like 1/2 a cup lol maybe little more. So this is my solution I bought these half cup 4 oz containers. I scoop my ice cream out to put in each one of them so when I go to grab 1 I know it's exactly the size I'm allowed to have. Might not be worth the work to some but it is to me or I will over indulge!
