A few months ago, the Cannon Falls Library ( ) came to me with a cool request: their patrons were asking great questions about nutrition trends online and deserved solid, evidence-based answers from an expert that made sense to them.

So I got to work! Together, we designed a three-session community education series covering social media nutrition claims and the real science behind what actually matters for nourishing yourself at any age.

When I’m presenting to a group or talking 1-1 with a patient, my goal is always to be honest and realistic. I wanted these patrons (mostly women in their 60s and 70s!) to feel confident separating fact from fiction, as well as understand what their lab values mean!

This is the kind of work I really enjoy. Building off my years as a prof, it’s fun helping audiences cut through the noise and work on a healthier relationship with food and nutrition.

After two years of a fully booked schedule, I’m excited to share that I’m opening up availability to take on new clients through my private practice The Nutrition Prof ! I’m now accepting 1-on-1 nutrition education and counseling clients, small group sessions, and community nutrition presentations. I love being a dietitian and my extensive experience as a professor teaching just about everything in the nutrition field guides my evidence-based work.

I most commonly work with people seeking support for:
*Blood sugar and cholesterol management
*Weight management through an intuitive eating and anti-diet approach
*Irritable bowel syndrome and other GI issues
*Cancer treatment complications related to nutrition
*General wellness — feeling stronger, more energized, and improving food relationships
*GLP-1 support — helpful for whether you’re just starting, running into obstacles, or adapting to no longer using the medication.
*Sports nutrition — for anyone ages 14 and older.
*Meal planning and recipe support

Also, for those who are just curious where they are at nutrition-wise, I am offering a basic Nutrition Analysis Package for a limited time that includes:

*A detailed analysis of your current dietary and nutrient intake in the context of your personal nutrition needs
*Two nutrition coaching sessions to discuss results and create a plan.
*Evidence-based guidance tailored to your nutrition needs and health goals

This is a great way to dip your toes into working with a dietitian if you are new to it!

For 1-1 coaching, I’m licensed in these states and can see people residing in: Iowa, Minnesota, Illinois, Oregon, Colorado, Virginia, Arizona, and California.

For group education and community presentations, I am available for all 50 states. 🙂

Lately, I’ve been torn with how I want to deal with fatigue and living a life that is busy. Can you relate?

I feel as though I’m being pulled into a million directions. On one hand, when I feel constantly fatigued, part of me thinks… maybe I should honor that, and maybe I should rest. Maybe this is self-care? How do we tell?

I’m finding I have a hard time choosing this consistently, because of the slippery slope my brain creates to make rest an excuse. Again, can you relate?! 😉

In this rut, I miss out on movement and if I’m being completely honest, opportunities for growth. The other day I was talking with my own therapist about how odd it was to me that I could coach my own patients on making small sustainable changes, even in the face of being tired, yet I was having a hard time doing this myself.

I see so many social media posts about doing less and honoring rest, and I think there’s a place for that and it is necessary. But one of the things I’m also coming to terms with is that we go through these phases in our lives where we cannot abandon our responsibilities and our priorities. And the rest can happen, it might just have to wait or we actively have to practice not using it as an excuse.

I often work with my patients on how to disrupt negative thoughts or impulses when it comes to food. So over the last week, I started to challenge myself to try and disrupt the thought process when I impulsively would convince myself I was too tired to move. Too tired to plan ahead in order to have quick meals to nourish myself.

The first phrase that popped into my head was “do it tired”. Did I enjoy doing some things while tired? No. I did not. But the more I kept telling myself, you can do this tired, the easier it got to be to pull myself away from disassociating and scrolling, social media, to actually do the things that would help me have easier days dealing with responsibilities moving forward.

In this busy season of life, changing our mindset ever so slightly can make a little difference…and those add up over time.

Chewing your food. Very demure. Very mindful.

Each week, my free newsletter encourages a different goal that you can take or leave. This week’s goal is to increase your awareness when eating and work on chewing your food. It’s hard to slow down, especially when we are hungry, but there are many benefits to thoroughly chewing and slowing down your intake!
