Both celiac disease and thyroid disease are autoimmune diseases (the body mistakenly attacks its own cells).

They are closely related to one another and to other autoimmune diseases, such as type 1 diabetes, Sjogren’s syndrome, autoimmune hepatitis, and Rheumatoid arthritis, etc.

When a person has one autoimmune disease, it is common to develop another in his/her lifetime.

Approximately 2-5% of patients with autoimmune thyroid disorders have celiac disease, due to common genes (HLA-DQ2 and HLA-DQ8) 1,2.

Currently there is no universal recommendation to screen asymptomatic individuals even in populations in which the prevalence of celiac disease is high.

However, there is widespread agreement on the need to test for diagnosis or exclusion of celiac disease in anyone with signs or symptoms.3

At this time, there is little data to suggest that the gluten-free diet reduces the chance of developing associated autoimmune disorders in a person with celiac disease.

Early diagnosis and the gluten-free diet do reduce complications such as malabsorption and improve the absorption of drugs.1

Celiac disease is often thought of as something that is diagnosed in childhood, but it can develop at any age. Over 80% of cases in the US diagnosed in adulthood. The reported mean age at adult diagnosis in North America is between 46 to 56 years!

Regardless of age, the same factors are involved in the development of celiac disease: genetics and consumption of gluten. Certain genes increase the risk, especially in people who already have autoimmune diseases like autoimmune thyroid disease or type 1 diabetes.

It is also believed that triggers such as viral infections, major stress, changes in gut bacteria, or pregnancy may also bring on celiac disease in people who are genetically at risk. However, researchers are still addressing these questions.

I checked out the new Ross in Cape and was shocked to see the amount of Gluten Free pantry items they had! 🥰
I decided to give the King Arthur cornbread casserole recipe a try. It turned out so good. My plan is to eat this with Ham and Beans I plan to make with leftover Easter ham.

Corn Bread Casserol
1 Box King Arthur GF Corn Bread Mix
1 cup shredded Mexican 3 Cheese
1 can Sweet Cream Corn
1/2-1 whole deseeded, diced jalapeno
1 Cup Milk
1/4 stick melted butter
Salt n pepper
Onion powder
Garlic powder

Mix wet ingredients in a large mixing bowl, add seasonings, box mix, and cheese and stir until combined. Pour into 9x13 baking dish. Let rest for 10 minutes.

Bake at 425* for 20 minutes until golden.
Let rest another 10 minutes before cutting.
Local honey goes great on top!

You can have celiac disease… and never feel it in your gut.

Let that sink in.

Because for some people, celiac disease doesn’t show up in the gut at all.

It shows up like this 👇
An intensely itchy, blistering rash.

It’s called Dermatitis herpetiformis —
but most people just call it “the celiac rash.”

Here’s what makes it confusing:
• It shows up on the skin (elbows, knees, scalp, buttocks, back)
• It’s usually symmetrical (both sides of the body)
• It itches like crazy — burning, stinging, can’t-ignore-it itching

And here’s the part most people don’t realize:

- It’s triggered by gluten ingestion
- Not gluten touching your skin
- Not a random allergy

This is an autoimmune response—just like celiac disease.

Even more confusing:
• Some people with this rash have normal celiac blood tests
• Some have little or no obvious gut symptoms

So they get misdiagnosed.
Or dismissed.
Or told it’s “just a skin issue.”

It’s not.

It’s celiac disease—just showing up somewhere else.

So what’s the treatment?

The same as celiac disease: Strict gluten-free diet (long-term)

Sometimes doctors use Dapsone to calm the rash quickly—but that doesn’t fix the underlying problem.

The takeaway

Celiac disease isn’t always obvious.
It isn’t always digestive.
And it doesn’t always look the way people expect.

Sometimes… it looks like a rash you can’t stop scratching.

1) Gluten-Free Comunion available 🤯

2) Gluten-Free Coffee (free) or Fancy Lattes and speciality drinks and snacks from their Coffee Bar. If I need to snack on something GF I bring in they understand. 🥰

3) Community and Staff that truly care about helping everyone. We believe we are called to be in fellowship together. We “wash each others feet like Jesus washed the deciples’”.

4) Growing in my faith consistently. 🙏🏼
