One of us received a copy of “Come Hungry” by for Christmas. Three recipes tried so far and all of them amazing. This is Rainbow Kale Salad although I had no kale so I subbed shredded green cabbage and a boatload of freshly grown sprouts. The Miso Vinaigrette sends it over the top. If you’re a meal prepper, this needs to be in your weekly rotation.

One of our favorite easy summer dinners right here: cut up raw tomatoes (any size); 1 large clove garlic minced; 5 or 6 large basil leaves, rolled and chiffonade (or sliced in thin strips if you’re not feeling fancy); a drizzle of EVOO; salt to taste (1/4 tsp?) Serve at room temp on cooked pasta. Perfection.

Homemade dairy free pineapple sorbet!
So easy and so delicious. Cut up a fresh pineapple, lay chunks in a single layer on a parchment covered baking sheet and freeze 4 hours or overnight. Put frozen pineapple in food processor and pulse until it forms dry bits. Add juice of one lime and add 1T of water at a time until consistency of sorbet. Add honey or agave if you wish and enjoy. Can be kept in airtight container in the freezer for a week.

Inspired by , I riffed on her slaw recipe and just starting throwing lots of gut-friendly foods into the Cuisinart using the rarely-seen-in-my-kitchen grater accessory: red cabbage, savoy cabbage, Honeycrisp apple, carrots, raw beet, red onion, jalapeño, cilantro, Hellman’s vegan mayo, lime juice and a drizzle of honey. Top with toasted almond slices. Makes a week’s worth of slaw. Try it!

Who knew you could boost the creaminess of a smoothie with raw zucchini?! This breakfast smoothie has 1 C frozen wild blueberries, 1C frozen sliced banana, 36g organic vegan protein powder, 129g raw zucchini (a piece about 5” long or 4 oz), and 1 C cold water. I wish you could taste this! Amazing!

Breakfast of champions! Did you know a cup of Swiss chard has double the amount of potassium as a banana but with only 1/3 the calories and none of the sugar? (Sugar in greens is negligible. 1 C Swiss chard = 0.4 g sugar.) I’m a weirdo and actually enjoy steamed greens but if you don’t, just throw a handful into a smoothie!

Scape season! Best pesto you’ll ever taste.

Pulse garlic scapes in food processor, add walnuts, pine nuts, pistachios, or sunflower seeds, a handful of fresh basil leaves, juice of a lemon, 1/4 - 1/2 C nutritional yeast (use Parmesan if you’re not vegan…although our non vegans cannot taste the difference when we use nooch!) Drizzle olive oil into food processor until you get the texture you want.
