What in the HEALTH is going on people?!
Here's a delicious recipe to keep your family warm and healthy!
Fall Harvest Soup.
Serves 10–12 | Prep: 10 min | Cook: 25 min | Cost: ~$0.35/serving

Ingredients
• 5 medium potatoes (from our garden or pantry)
• 4 large carrots, scrubbed & chopped
• 1 large onion, diced
• 3 cloves garlic, minced (or 1 tsp powder)
• 6 cups water + 2 veggie bouillon cubes (or 6 cups low-sodium broth)
• 1 tsp each: dried basil, oregano, rosemary (fresh from garden = 1 Tbsp each)
• ½ tsp black pepper
• Optional: handful of kale or spinach

Instructions
1. Sauté: In a large pot, heat 1 Tbsp oil (or water). Add onion & garlic; cook 3 min until soft.
2. Add Veggies: Toss in potatoes & carrots. Stir 2 min.
3. Simmer: Pour in water + bouillon. Add herbs & pepper. Bring to boil, then lower heat. Cover & simmer 20–25 min until veggies are fork-tender.
4. Creamy (Optional): Use a potato masher or blender to mash/blend half the soup for creamy texture.
5. Finish: Stir in greens (if using) for last 2 min. Taste & adjust salt/pepper.
