Superfood of the week: Bell Peppers

Bell peppers (especially red ones) supply a day's worth of vitamin C and a variety carotenoids (antioxidants akin to beta-carotene).
Bell peppers contain sulfur compounds that can aid in preventing cancers.

Older is key here as ripe bell peppers have much more of nutrients than young ones.

Aside from tomatoes, Bell peppers are the only other vegetable that contains at least 2/3 of listed carotenoids.

Enjoy them on your sandwiches, in soups, stews, and use to add flavor to foods.

Try this quick recipe packed with mushrooms!

Chicken, mushrooms & asparagus in creamy parmesan sauce

Chicken (2-3 breasts or 4-6 boneless skinless thighs)
A bunch of asparagus
2-3 large portobello mushrooms
Diced pancetta or bacon (optional)
Chopped garlic
Butter or olive oil
Chicken stock
Parmasean cheese


1.Cut chicken into bite sized pieces and brown in pan. Add a small amount of chicken stock to help keep it moist.
While waiting for chicken to cook, begin boiling water for noodles. Then chop mushrooms and asparagus.

2.Remove cooked chicken and place in bowl. Add a tsp of butter or oil to pan, a heaping spoonful of chopped garlic, panchetta or bacon if desired and basil. Add veggies and allow them to cook until soft.

3.Add noodles to boiling water. Cook 6-8 minutes until soft.

4.Add chicken a little bit of milk and a cup of parmasean cheese. Cook until it looks and smells amazing.

Try a superfood packed fruit salad. So easy the kids can help!

2 lemons, juiced
1 teaspoon honey
2 tablespoons chopped fresh mint, + extra leaves for garnish
1 pound mango chunks
1 pound kiwis, peeled and sliced
1 pound strawberries, hulled and quartered

In a small bowl, whisk together the lemon juice, honey, and chopped fresh mint. Set aside while preparing the fruit to allow the mint to infuse the mixture. You can make this up to one day ahead.
Put the fruit pieces in the large bowl and gently toss with the lemon mixture. Chill in the refrigerator until ready to serve. Best eaten within a few hours.

Simple Roasted Butternut Squash recipe

Delicious vegetables can be quick and easy!

1 butternut squash - peeled, seeded, and cut into 1-inch cubes
2 tablespoons olive oil
2 cloves garlic, minced
salt and ground black pepper to taste

Preheat oven to 400 degrees F (200 degrees C).
Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on a baking sheet.

Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes
