šŸ‹šŸ« Lemon Blueberry Coffee Cake
(KHL Style)

Ingredients

Cake
• 1 cup almond flour
• 1 cup whole wheat pastry
• ½ cup cane sugar
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt

Wet
• 2 eggs
• ½ cup plain Greek yogurt
• ā…“ cup avocado oil
• ā…“ cup milk
• Zest of 1 lemon
• 3 tbsp lemon juice
• 1 tsp vanilla


Add-ins
• 1 cup blueberries

Crumb Topping
• ½ cup almond flour
• 2 tbsp flour
• 2 tbsp coconut sugar
• 2 tbsp ghee
• Pinch cinnamon (optional)

1. Preheat oven to 350°F + grease pan
2. Mix dry ingredients
3. Whisk wet ingredients (add blueberry extract here)
4. Combine gently
5. Fold in blueberries
6. Pour into pan
7. Add crumb topping
8. Bake 35–40 minutes
9. Cool + enjoy šŸ¤

Optional Glaze
Powdered sugar + lemon juice drizzle

I walked a half marathon in this hat.
Not running. Not racing.
Just moving. And I enjoyed it.
That’s the part that matters.
Because when you enjoy something,
repetition doesn’t feel like work —
it feels like joy.
That’s how sustainable habits are built.
Not through pressure.
Not through punishment.
But through movement that meets you where you are
and gives something back.
Joy creates rhythm.
Rhythm builds strength.

Simply Begin…
There is never a perfect time to start—so we begin anyway. Life is always changing.
Throughout my life I’ve faced multiple medical challenges, and right now I’m navigating a new one connected to an old injury. So once again, I begin.
A new supplement rhythm.
New recipes that support sustainable health and strength.
And most importantly, a deeper walk with Jesus—keeping my spirit grounded, my mind aligned, and my body supported.
No matter how tired, stressed, or worn we feel, sometimes the most important thing we can do is reset.
Because often, starting is the hardest part.
