What’s on the menu this week?

I made my meal plan yesterday, and totally forgot that Wednesday is Cinco De Mayo!! So, swapping what I was going to make for this quick and easy dish - Bell pepper nachos paired with a side salad. 🫑🍅🌮

Bell pepper nachos have been a staple at dinner since I started 2B! Seriously, life changing when I discovered these! 🙌

The best non scale victory is...

🏆 C O N F I D E N C E 🏆

Which is often the biggest thing we struggle with, and the most sought after feeling we all long for!

Right⁉️

We say things like...

➡️I want to lose ____lbs!!!!

➡️I want to wear a size ____!

➡️I want to wear a _____ (two piece, crop top, form fitting shirt, etc.)

Ultimately... all of those things are the product of wanting to have CONFIDENCE In ourselves! It’s less about our weight, size or what kind of clothing we want to wear. We want to feel good in the skin we are in!

When you finally make yourself a priority, and pour love into yourself, and see what you are truly capable of... that is when the confidence comes!!!

Have you ever thought about how proud you are of your children, husband, or friendships?

It’s because you pour love into those relationships! You care for those special people. How often do you pour into YOU though?

It’s not selfish to pour into YOU.

Salads are _______ !

How many times have you thought...

▪️Salads are so boring!

▪️Salads are only for skinny people!

▪️Salads are only for vegetarians!

▪️Salads are not filling!

I used to feel the same way about eating salads, until I discovered the (the creator of ) way of eating a salad...

You gotta make it a sexy salad! 😆

So, how do you do that?!

🥗 Choose accessories to add that you love!!! Examples: olives, seeds, cranberries, dressing (tip: water down your dressing with 1 tbsp water to 1 tbsp dressing), shredded cheese, etc.

🥗 Add your favorite protein. Some ideas: chicken, tuna, steak, turkey, fish, shrimp, etc.

🥗 Be sure to change it up, so you’re not bored! No one wants to eat the same kind of salad everyday.

🥗 Salads are for volume eaters!!! So fill up that plate with tons of leafy greens and your favorite veggies!

Pictured, is one of my favorite salads! I call it a copycat Chick fil a salad - instead of fried or grilled chicken though, I used chicken — so good! And, of course I added tons of cherry tomatoes, and my fab bbq ranch dressing that came with this salad kit!

It’s official, this handsome dude is ELEVEN! 🎉🎉🎉

I'm not sure how eleven years has gone by so fast, but it feels like he was born just yesterday! I blinked, and now he's 11!

We are so proud of the young man he's becoming and how his personality has developed over the years! Connor can light up a room and put smiles on everyone's faces in a matter of seconds, he loves to make others laugh cracking jokes, he’s incredibly smart, an NBA star in the making, and the best big brother!

We are blessed ! We love you to the moon + back buddy! Happy 11th birthday! 🥳🎉

15 minute, 3 ingredient Meal for the busy mama! I’m also going to share a couple of time-saver kitchen hacks too!!

You’re going to want to SAVE this!

This spaghetti squash chicken Alfredo was so easy and delicious! Here’s the ingredients/recipe:

Ingredients:
1️⃣ Small - Medium Spaghetti Squash

2️⃣ Shredded chicken (hack - buy a rotisserie chicken and shred with your stand mixer or hand mixer)

3️⃣ Alfredo sauce (I like )

Optional: Italian seasoning and shaved Parmesan

Recipe:
🟡 Cook the spaghetti squash in the microwave!!! This is a game changer - poke holes with a fork all around, the microwave in 3 min. increments until the outside is soft/squishy (kitchen hack) - it should be done in about 8-10 min! Then, cut in half and scoop out any seeds.

🟡 Measure out desired shredded chicken, mix into spaghettini squash.

🟡 Measure out Alfredo sauce (with whatever the serving size suggests), warm up via stovetop or microwave, too chicken and spaghetti squash, and mix all together.

** Optional: add Italian seasoning and shaved Parmesan on top!

That’s it! So simple and so good! It’s definitely a new staple in our menu rotation!

I’m SO excited for my new workout program, Let’s Get Up!!! 🕺🎉💪

First, let’s clear up some myths!

When I first heard that our new program by was going to be a dance program, I went into panic mode! I thought, I have ZERO rhythm, I’d be too embarrassed to do this on zoom, or post my workout clips in my IG stories!

Why was I in this negative headspace all of a sudden??

Because, it was out of my comfort zone. Guess what?! Comfort zones don’t get us results! It’s when you challenge yourself, that you see results!

I’m stepping out of my comfort zone! I am doing this program to feel good, to inspire and motivate others, get results, and what a FUN way to get in your workout!

Okay — so let’s get to some myths that are floating around!!

❌ MYTH: This program is only dancing!
✅ TRUTH: This program combines dance-conditioning cardio, HIIT, and resistance training (hence the dumbbell I’m holding)

❌MYTH: You must share your moves on Tiktok, Instagram, Facebook, etc. How else will anyone know that you are doing it?
✅ TRUTH: Of course NOT! You’re never required to share any of your dance moves on social media (same with any of our other programs).

❌ MYTH: Dance programs are only for beginners! This program won’t challenge me.
✅ TRUTH: There are actually three calendars to choose from with different intensity levels!

Now that I’ve cleared all of that up! I’m going to share some insider details...

My coaching team had two ladies that were able to be in the test group with !!! They used the word JOY so many times to describe this program! They explained that brought the excitement, JOY, and positive energy EVERY time and that they never dreaded a workout, because they were so much fun! Not only is the program fun... but gets results! 🔟 minute Air Fryer Zucchini Chips

I have been wanting to make crispy zucchini chips forever!!! But, every time I tried they still came out soft, instead of crispy.

I finally figured it out, after some trial and error. Here are my tips to getting them crispy:

✅ Make sure you slice your zucchini very THIN with a mandolin peeler (or, a handheld peeler works great too) 1/8 inch slices

✅ Make sure to get ALL of the moisture out by patting them well!!!

✅ Make sure to use a small amount of olive oil!

These crispy zucchini chips can also be made in the oven, but will take much longer (typically up to 2 hours). Hence why I LOVE my air fryer!!!! P.S. I have a Ninja Foodi and It’s seriously the best kitchen gadget I have ever purchased!

Here’s the recipe (double as needed):
• Slice 1 small-medium zucchini (thin!)
• spread out on plate or cutting board, and sprinkle 1/8-1/4 tsp of salt on the slices
• Let them sit for 5 minutes
• Then, pat very dry!!!
• Put all slices into a zip lock bag or bowl with 1 tsp of olive oil - coating them.
• Place zucchini slices into the air fryer, set temp for 350° for 10 minutes or until crispy!

I paired mine with some ranch as well. They were perfectly crispy and delicious!

What’s important to you in life?

For me, it’s my family, health, and happiness! I would have answered that question differently in the past. My family has always been at the top of my priorities, but putting myself at the top too - not a chance!

Why don’t we make ourselves a priority? Why is our health and happiness not as important as our family’s? 🤔

Because, we tell ourselves things like,
.. I don’t have enough energy/time to workout.
.. I don’t have time to cook healthy meals.
.. I don’t have willpower, motivation, or discipline.
.. I am just meant to be this size.

And, the list goes on!

Well, guess what? Those thoughts in your head lying to you!

You ARE capable of making YOU a priority! How do I know this? Because, I believe in YOU!!! If you don’t believe in yourself, then feel free to borrow mine, until you’re able to. ❤️

Listen, I have been there. I had to borrow someone else’s too. But, I am forever thankful I decided to take that leap of faith with my coach/mentor who believed in ME, when I didn’t!

Because of that borrowed belief in myself and having the tools and community to support and guide me, I can tell you that my health and happiness are just as important to me now, as my family’s! I’m 70 lbs lighter, more confident, stronger, and overall happier & healthier!

You cannot pour from an empty cup. Your family NEEDS the best of you! Therefore, your health and happiness need to be equally as important as theirs (If not more)!!! 🤯

Feel Good Friday! 😊

In my wellness community today, we focused on feel good moments and lifting others’ spirits!

Why is this significant to health and wellness?

I believe that we rise by lifting others, as my shirt says. Mindset Makeover - my wellness community, is a positive and uplifting space. Sharing and surrounding each other with positivity leads to positive choices, less stress, and less negativity. 🙌

We should not only seek joy for ourselves, but also share with others! You never know what a simple, kind gesture may do for someone! A simple compliment, hug, or token of appreciation could turn someone’s whole day around!

As a military wife living on an Air Force base, I’m always thankful for our security forces that operate/guard the gates. They work long hours, day/night, and in all weather conditions to keep our military bases safe and secure.

I brought them some fresh cookies and a thank you card! The smile and gratitude for a yummy treat made my day!
