What’s the difference between a portion and a serving size?

Simply put, a serving size is what you find on the back of a box or can of food; a portion is an amount of food influenced by our experiences, our bodies and how much food we need to fuel our day.

One serving might be the perfect amount of food for you to feel full. But for the person sitting across from you at lunch, that serving size might be too much or too little.

The important thing is to listen to your body to help determine the nutrients and fuel you need for your day!

As a nutrition coach, I hear a lot of talk about processed foods. Can you eat them? Should you eat them?

For me, there's no firm rule!

I enjoy a boxed macaroni and cheese or bowl of soup from the store. These foods are definitely processed, but they're not "unusable"!

Sometimes I enjoy these foods on their own, but I often like to take these processed foods and "embellish." Maybe I'll use real cheddar and milk instead of the powdered cheese that comes with my boxed mac and cheese. Or I'll chop up fresh veggies for added nutrients.

Instead of seeing these processed foods as "bad" for me, I'm looking for ways I can embellish them for an easy, nutrient-rich meal!

I love macaroni and cheese (even though I might feel guilty for eating processed food). But I also love when I can “embellish” a processed food to ensure I’m getting the nutrients I need!

I’ll cook spinach, onions or broccoli and add it to the noodles. Sometimes I use real cheese, sometimes I use the cheese that comes with the package and add milk to it.

🥘 By embellishing, I’m taking a processed food and adding the nutrients I need to fuel my body!

Let’s reframe how we think about processed foods!

Think about this processed soup from my pantry. It has preservatives and a long list of ingredients.

Would I eat it every day? Probably not! But there isn’t much I’d eat every day of the week (besides an apple)! 🍎

But you can take this processed soup and “embellish” it. Choose some fresh broccoli or onions or chicken and add it to the soup. Now you’ve made this processed soup more nutrient-dense.

Every meal doesn’t have to be made from scratch. Embellishing is a great way to ensure you’re getting the nutrients you need — and make food prep less daunting!

🌸 This new season means a new opportunity to buy local favorites or try a food you’ve never had before!

Recently, I had a conversation with one of my virtual clients about seasonal eating. There are some foods we enjoy more in different seasons. In the winter, a warm soup or stew or a hearty roast sounds delicious! But in warmer weather, we often gravitate towards cooler foods like salads or cold meats. 🥗🍓

One thing to know about Tennessee in the spring? The weather is hard to predict!

These comments may seem trivial to the speaker, but for someone who is struggling with an eating disorder or trying to make mindful choices for their body, comments like these can be damaging and discouraging.
