Banana Nut Muffins: 🍌
Ingredients:
2 ripe bananas, mashed
1/4 cup honey or maple syrup
1/4 cup unsweetened applesauce
1/4 cup Greek yogurt
1/4 cup almond milk (or any milk of your choice)
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chopped walnuts or pecans
Instructions:
1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with cooking spray.
2. In a large mixing bowl, combine the mashed bananas, honey or maple syrup, applesauce, Greek yogurt, almond milk, and vanilla extract. Mix until well combined.
3. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
5. Gently fold in the chopped walnuts or pecans until evenly distributed throughout the batter.
6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
7. Optional: sprinkle a few extra chopped nuts on top of each muffin for added texture.
8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
9. Remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
