“I could never eat like that.”

Comments like this can feel really isolating when you live with Celiac Disease or dietary restrictions every single day.

Trust me, I’d love to not have to think about cross contact, ingredients, restaurants, travel, or whether food is safe. But this isn’t a choice or a trend for me (and lots of others). It’s treatment for my chronic illness.

One thing I’ve learned though? The right people won’t make you feel like a burden for taking care of yourself.

They’ll ask the right questions.
They’ll want to learn.
They’ll help you find somewhere safe to eat.
They’ll support your needs without making you feel “difficult.”

So if you’ve ever felt awkward, guilty, or “too much” because of your food restrictions, this is your reminder that your needs are valid 💚

And to everyone else: small comments can stick with people more than you realize.

Is sourdough gluten-free? 🍞🤔

This is one of the MOST common questions I hear from people newly diagnosed with Celiac Disease or gluten sensitivity. While sourdough goes through a fermentation process that changes the bread, traditional sourdough made from wheat, rye, or barley is still NOT safe for those living gluten-free.

May is Celiac Disease Awareness Month 💚

Celiac disease is more than just “avoiding gluten.” It’s an autoimmune condition where the body attacks its own small intestine in response to gluten exposure.

Here are a few key things to know:
👉 It’s an autoimmune disease, not a preference or trend
👉 The only current treatment is a strict, lifelong gluten-free diet
👉 About 1% of the population is estimated to have Celiac Disease (and many are still misdiagnosed or undiagnosed)

Awareness matters, because earlier diagnosis, proper education, and support can make a huge difference in long-term health and quality of life.

I’ll be sharing a new blog post later this week that breaks this down even further, including what to look for, how it’s diagnosed, and what living gluten-free actually looks like. Stay tuned 👀

Gluten-free Italian food just hits different 🇮🇹✨ (though I prefer to eat it in Italy, hopefully I can get back soon 🙏🏻)

At Mandola’s, it’s the kind of experience that feels familiar in the best way, warm, comforting, and full of those flavors you might have thought you’d have to give up.

A plate of gluten-free pasta with rich sauce, the smell of fresh herbs, and then finishing it off with something sweet from the gelateria… it instantly took me back to my time in Italy. 🍨

Those moments, where food feels both safe *and* special, are the ones that stick with you.

I recently updated my blog post about Mandola’s and shared more about my experience and what to expect if you’re dining there gluten-free. I also learned they've expanded outside of Texas, which is exciting news! 🎊

Trying something new this month 👩‍🍳✨

One of my goals this year is to make 1 new recipe every month and actually share it here. Because let’s be honest… food fatigue is real, especially when you’re gluten-free and cycling through the same “safe” meals 🫠

April’s experiment: air fryer tofu 🙌
I wanted to explore a non-meat protein option and see if it could actually hold up for meal prep… and it did!

✔️ Paired it with rice + yum yum sauce + edamame
✔️ Held up well for leftovers
✔️ Super simple once I got the hang of it

Not gonna lie, there were a few hiccups (aka tofu sticking to the air fryer pan 😅), but overall this is one I’d definitely make again.

This is your reminder that trying new foods doesn’t have to be perfect, it just has to be something different.
