Golden Egg & Herb Salad Power Plate with Avocado & Grapes 🌿🍇

Creamy, cheesy eggs, silky sliced avocado, a vibrant herb tomato salad, and juicy grapes make this a power-packed plate that’s as beautiful as it is nourishing.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
For the Eggs:

2 eggs

1 tsp butter or olive oil

Salt & freshly cracked black pepper

Optional: a pinch of chili flakes or cheese (like cheddar or mozzarella)

For the Salad:

½ cup mixed cherry tomatoes, halved

1 tbsp red onion, finely diced (optional)

Fresh dill & mint leaves (about a small handful each)

½ tsp olive oil

½ tsp lemon juice or white balsamic

Salt & pepper to taste

Other Components:

½ avocado, sliced

Pinch of everything bagel seasoning or sesame seeds

A small handful of black or red grapes

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

1️⃣ Make the Eggs
Heat butter in a nonstick skillet. Crack in the eggs and cook sunny-side-up or over-easy, keeping the yolks jammy. Sprinkle with salt, pepper, and cheese or chili flakes if desired.

2️⃣ Prepare the Salad
In a bowl, toss halved tomatoes, dill, mint, red onion (if using), olive oil, lemon juice, salt, and pepper. Let it sit for 2–3 minutes to blend flavors.

3️⃣ Slice the Avocado
Fan out avocado slices and sprinkle with everything bagel seasoning or sesame seeds.

4️⃣ Assemble the Plate
Arrange eggs, avocado, salad, and grapes on a plate. Finish with an extra crack of black pepper over everything.
