Welcome to my page! My name is Nichelle and I am so happy you found me! My guess if you stumbled upon my page you were searching for a new direction. Maybe some balance, organization, healthy plant based eating inspiration or simply a something new! I aim to achieve balance in every aspect of my life and strive to live a happy healthy lifestyle with room for growth and exploration. This is an ongoing story, one I would like to share with as many people as possible to encourage strength and hope in people who who are not sure where to start or those who need motivation to stay on track. Join me!
As a wife, a mother of 4 children, a dog mom to a big fluffy dog, a student in 2 graduate programs, a marketing consultant, author, and business owner, life can get quite hectic! But, when I think about balance, I immediately get a sense of calm and can see things more clearly. Hopefully as you learn more about my story you will see it too! The impossible can be possible and focus and balance in all things can be a reality everyday. It takes commitment and planning but you can do it too!
I have struggled with my weight for a majority of my life and tried every diet out there. The worse weight gain was after I quit smoking (after 15 years) I gained 30 pounds and am still working on balancing out my weight. I watched some documentaries on Netflix about a plant based diet and the health benefits it could bring and it touched my soul. I decided to try it and I felt better mentally, spiritually and physically but gained another 10 pounds over the next year. I was eating mostly processed plant based foods and was never full. Mortified at all the weight I had gained over 2 years, I stopped my plant based diet and started keto. I yo-yo’d on keto for several months and ate meat and cheese only for a spell and then I would binge eat everything in sight. I lost and gained the same 10 pounds repeatedly. I had no energy, I was extremely depressed and angry and all I could think about was eating fruit, vegetables and carbs. Remembering how amazing I felt on a plant based diet, I decided weight gain or not that I wanted to go back on a plant based diet and never look back. I started a plant based diet again in Oct of 2019 and only after a short time I have more energy, feel lighter and have never been happier. This time I strive to eat a balanced diet of whole plant foods, but sometimes I eat plant-based junk food. Hey....there is balance in all things, right? I am always trying new recipes and making videos to share on my Youtube channel. I am documenting my weight loss health journey and will be sharing that with you all!
Although our family has always ate fairly healthy, I have slowly (over a couple months) transitioned my children from eating a “healthy” standard american diet (SAD) to eating a plant based diet. I will share the what and how with you! I do encourage them to make their own choices outside of our home. I want them to learn to do what is best for them and to create balance in their own lives. On Sunday’s I meal prep for the week and hope to start sharing that soon as well! I share plant-based holiday menus and lunch ideas for lunchboxes as well as dinner ideas and don’t forget desert! I am wrapping up my 1st Ebook and that will be coming out in 2020 with all my favorite easy recipes!
